Image
By McDonald, T.   |  Date 1st of July 2024 Do you like carrot cake?  Yes, great! So, why not try out carrot cake flavoured overnight oats?  I know, you think that i'm having you on, but I'm not and it is such a great treat in the morning or anytime.  It still has that creamy taste and texture, but with a distinct carrot cake flavour and with the added bonus of vitamin A.

Tropical Overnight Oats

Image
Written by McDonald, T.   |  Date 19th of February 2024 I love overnight oats because they are so easy to make, yet so tasty!  You just put most of it in a jar with vegan milk and leave it overnight.  I guess that is why it's called overnight oats.  There are lots of versions and this is the tropical fruit one. Enjoy! Notes I tried adding the banana chips earlier and leaving it overnight, but they lost a lot of flavour.  It was the same for the papaya and pineapple pieces. You can use any vegan milk, but the coconut milk alternative works best.  This is not the coconut milk you get in a can.  Providing you are not intolerant to wheat or have a wheat allergy, you can add a tbsp of wheat bran. Although oats are gluten free, they can be easily contaminated when packaged on factories. Ingredients Rolled oats x 40 g Coconut milk alternative x 200 ml Chia seeds x 1 tsp Flaxseed x 1 tsp A few banana chips  Sultanas x 1 tbsp Papaya and pineapple pie...

Vegan Scramble Egg Breakfast

Image
Written by McDonald, T.   |  Date 4th of January 2023 There are many breakfast ideas you can have, but this one I tried recently.  It comes straight out of a packet from the Tofoo Co Ltd and tastes great!  I tried it on toast with a vegan sausage, tomatoes, and onion.  It only takes 4 minutes in a frying pan to heat up, and then it is ready.  For an added bonus, the packet says you can add vegan mayonnaise to it to make egg mayonnaise. How did it taste? It tasted great.  It was not exactly the same as egg; however, it was very tasty.  It lacks the creaminess of scrambled eggs, but I was fine with that since the flavour and texture were great in their own way. I hope that you liked this blog.  Please leave a comment below.

Banana Oat Cakes

Image
Written by  McDonald, T.    |  Date 15th of April 2021 This is a very easy recipe that is tasty and quick.  It is very versatile with the banana and oats being the main ingredients with every thing else adaptable.   Not only that, you can have them for breakfast or just as a snack.  The first time around i underestimated the sugar and salt, but with some practice these were easy to conquer.  Once cooled down, it is possible to store them in an air tight container in the fridge of up to 3 days.    Why are oats good for us?  Oats are great at keeping us feel full because they have both insoluble and soluble fibre. Oats are good for digestive health. Oats are associated with good heart health.   Source 6 Cakes Ingredients   Banana x 2 Rolled oats x 1.5 cups Apple sauces x 1 tsp Sultanas x 2 tbsp  Cranberries x 1 tbsp Pecan nuts x 8-10 nuts Ground almonds x 1 tbsp Mixed spice x 1/2 tsp Sugar x 1 tsp (optional) Salt ...

Breakfast Without The Oink!

Image
By McDonald, T.   |  Date 22nd of January 2021  So far this is only the second fake bacon or facon i have ever tried.  However, both have been great, but have their own characteristics.  The two facons i have tried are This is not bacon and Naked without the oink.  While This is not bacon has a more meaty texture, without the oink looks more like bacon with its two colours and shape.  Both are great but what i like about without the oink is you can do more with it.  You can wrap it around a vegan sausage, you can lay it on something like a vegan steak or a roasted cabbage for instance.  Without the oink tastes bacon-ish and, I think, has an OK texture, it cooks quick and will start to crisp.   In short I was very impressed with Naked without the oink facon. 8/10 Both facons are great in a sandwich and contain a lot of protein.  For a bonus, they both have added B12.  Hopefully by now if you have been following Veganuary,...

Vegan Fry Up

Image
By McDonald, T.   |  Date 9th of January 2021 Want an English fry up? Well this is just that, but with a twist! The sausages are Chorizo style and everything is vegan.  The sausages come from Wicked Kitchen and the facon (This is not bacon) comes from This.  Put these two products on a plate with some beans, fried mushrooms and tomato, and you have a breakfast that would make any meat eater jealous!   The sausages are great, spicy, tasty and have a meaty texture.  Although it says in order to get best results put under the grill, they fry up fine.  The facon is fabulous, but I wish they where a bit bigger.  Nonetheless, they taste great, but don't overcook them or they will taste yuk.  On the whole this is an easy breakfast and both filling and satisfying.  It is worth noting, the facon contains high levels of protein and is fortified with iron and B12.  In fact, this breakfast gave me 4mg of iron and 27g of protein!  Thi...
