No Tuna Pasta Bake

Written by McDonald, T.   |  Date 17th of October 2022 I first learned about tuna pasta bake as a young support worker in supported living and quickly gained a liking for it.  However, since becoming a vegan, I have not found a recipe for it that takes my liking until now.  You may have had jackfruit burgers or curry as it is sometimes used as a pulled pork substitute.  Nonetheless, it works fine as a tuna substitute in this recipe.

I will not be showing you how to make pasta or the cheese sauce, but I will show you how to make this fantastic dish in easy steps.  By the end, you will have a great dinner that you will likely want to make again. 

Original Vegan Lasagna

Sun-dried Tomato And Pasta

Written by McDonald, T.   |  Date 15th of January 2022  Ingredients  Pasta Cashew cream ( How to make cashew cream ) x 4 -6 tbsp Chopped tomatoes (canned is fine) x 200g Sun-dried tomatoes x 3-4 chopped Chopped mushrooms x 4 -5 Diced courgette/zucchini x 100g Cider vinegar x 2 Nooch x 1 tsp   Salt and pepper to taste  For the garnish  Fresh basil Sliced olives  Method Fry the onion in some oil. Cooke the pasta. While the pasta is cooking, add all the other ingredients to the fried onions.  Stir and leave to simmer on a low heat until the pasta is cooked.  Add the pasta to the sauce and serve with some basil and olives. Written by McDonald, T.   |  Date 8th of October 2021 Home-made lasagna is so much better than any other kind.  In fact, this vegan lasagna was one of the first non meat dishes I ever tried and even then I thought it was better than its meat counterpart.  It turns out, there are two different types of vegan lasagna: one with lentils and one with chunky vegetables.  This recipe is for the chunky vegetables lasagna.  I will lead you through the stages resulting in an amazing dinner that will impress the whole family. Notes You can make your own or buy pasta sheets. Dry pasta is vegan whereas fresh pasta from a shop is not.  Making your own tomato sauce is easy. Ingredients  Dry or home-made pasta sheets Courgette x 1/2 Carrot x 1/2 Mushrooms x 6 Aubergine x 1/2 Red pepper x 1/2 Vegan white sauce for lasagne x enough to cover the top Vegan cheese x 50g  For tomato sauce Tomatoes x 4 Brown sugar x 1 tsp Basil x a few sprigs Garlic x 4 cloves crushed   White wine vinegar  Black pepper to t

Vegan Lunch Box: Pasta And Tuno

By McDonald, T.   |  Date 23rd of Jan 2021 When you need a brake from bread of any kind, pasta can be a welcome change.  An easy to prepare lunch with just a few ingredients.  If you are an ethical vegan, than the lunch box will be right up your street!   Ingredients  Tuno sweet chilli Wholemeal pasta Sweetcorn Spring onion Red bell pepper Carrot Tuno vegan tuna comes in three flavours: sweet chilli, lemon and plain in spring water.  I find that it helps to add lots of flavours to the Tuno or it will taste a bit bland.  The lunch box comes from Eco Bravo and is stainless steel making it easier to recycle than plastic.  It also comes with a silicon seal to make it leak proof.  I love the fold up cutlery and cotton bag that comes with it.  The compartment separator is removable and adjustable, so it is easy to change the size of the compartments or just have one big compartment.  Please like and subscribe to my blog for more as a vegan of faith.

Spaghetti And Meat Free Balls (Vegan)

By McDonald, T.   |  Date 10th of December 2020 Spaghetti and meatballs was one of my favourite meals, so when i found a mock meat to recreate this al time favourite of mine i leaped at the chance!  I am glad this didn't disappoint.  The meat free balls come from Plant Chef from Tesco, but the tomato sauce is mostly home-made.  Severs 1 (Multiple by however many you are catering for) Time : 15 minutes  Ingredients 4 Plant Chef Meat Free Balls 100 g chopped tomatoes  1 tablespoon of salsa  2 tsp vegan pesto 2 tsp of garlic paste 1 tsp of chilli powder salt  pepper 1 tsp of balsamic vinegar 2 tsp of soya sauce Dried spaghetti (Dried is vegan, but fresh is not) Some mixed veg such as peas, carrot, runner beans and sweetcorn Apparatus  Saucepan Frying pan  Spatula  Tongs Method  Pan fry the meat free balls for 12 minutes on a medium heat with a little olive oil.  This will need your constant attention because you will need to keep turning them. Mediterranean Butter Beans with Wholemeal Pasta

By   McDonald, T.   |  Date 17th of October 2020     If you like strong flavours, this is a must try.  The tomato sauce is bursting with flavour and the wholemeal pasta will keep hunger at bay for longer.  Easily veganized by omitting the pesto (pesto has cheese in) Servers 2 Ingredients 1.5 tsp balsamic vinegar 1 tsp soya sauce 2 garlic cloves, finely chopped  1 tsp garlic granules  50g of chopped tomato 1/2 tsp of maple syrup 50g of butter beans, rinsed and drained  wholemeal or lentil pasta 1 carrot sliced 1/4 cup of peas Some Coriander, chopped 2 tablespoons of salsa 2 tsp of chilli and tomato pesto (leave this out if you want vegan) Salt to taste Apparatus Sharp knife Chopping board Saucepan Method Except for the coriander, put everything in a saucepan and cook for 10-15 minutes.  Ensure the pasta is tender before serving.  Use the coriander to garnish.  Tips  Soak the pasta for 20 minutes beforehand.
