Sun-dried Tomato And Pasta

Ingredients 

  • Pasta
  • Cashew cream (How to make cashew cream) x 4 -6 tbsp
  • Chopped tomatoes (canned is fine) x 200g
  • Sun-dried tomatoes x 3-4 chopped
  • Chopped mushrooms x 4 -5
  • Diced courgette/zucchini x 100g
  • Cider vinegar x 2
  • Nooch x 1 tsp  
  • Salt and pepper to taste 

For the garnish 

  • Fresh basil
  • Sliced olives 

Method

  1. Fry the onion in some oil.
  2. Cooke the pasta.
  3. While the pasta is cooking, add all the other ingredients to the fried onions. 
  4. Stir and leave to simmer on a low heat until the pasta is cooked. 
  5. Add the pasta to the sauce and serve with some basil and olives.
