Sun-dried Tomato And Pasta

- Cashew cream (How to make cashew cream) x 4 -6 tbsp
- Chopped tomatoes (canned is fine) x 200g
- Sun-dried tomatoes x 3-4 chopped
- Chopped mushrooms x 4 -5
- Diced courgette/zucchini x 100g
- Cider vinegar x 2
- Nooch x 1 tsp
- Salt and pepper to taste
For the garnish
- Fresh basil
- Sliced olives
- Fry the onion in some oil.
- Cooke the pasta.
- While the pasta is cooking, add all the other ingredients to the fried onions.
- Stir and leave to simmer on a low heat until the pasta is cooked.
- Add the pasta to the sauce and serve with some basil and olives.
