English Sultana Bread

Image
Written by McDonald, T.   |  Update 10 of March 2023     This modern English bread is like a combination of Hot cross buns and Italian Raisin Bread.  It has big fat juicy sultanas with a subtle mixed spice flavour of Hot cross Buns and, let's not forget, a wonderful crust.  The bread is light and fluffy.  As it bakes in the oven, it releases a fantastic aroma into the kitchen and beyond.  Once you have made this bread, you can just cut a piece off and have it as a snack with some butter and jam.  Enjoy!

Easter Oats: Hot Cross Bun Flavour

Image
Written by  McDonald, T.    |  Date 11th of April 2022 This is a simple, but tasty recipe that really surprised me at how good it is.  It has all the good bits that a hot cross bun would offer in that it has mixed peel, sultans and even mixed spices.

Vegan Hot Cross Buns: White Flour Batch

Image
Written by  McDonald, T.    |  Date 5th of April 2021 Hot cross buns are a sweet treat at Easter for Christians in the UK. They are a bun with crosses on, have sultanas or sometimes over fruits such as apple in with spices and mixed peel.  People have them as a snack with butter and jam or just butter at anytime over Holy week and Easter.  Some people like to toast them while overs eat them as they are. Since i am a vegan, i wanted to make a vegan version of this traditional British Easter bun.  I chose to go with the traditional fruits and mixed peal because i know this is what people are expecting and i didn't want to disappoint them.  The mixed spice adds a unique flavour; however, i  added more cinnamon so as not to stray to far from the traditional bun.  In addition, i added both lemon and orange zest simply because i had both in the fridge and they needed using up.  The zest adds a fresh zing to the flavour. Moreover, i choose to use plain white flour to keep the

Vegan Wholemeal Hot Cross Buns Recipe

Written by  McDonald, T.    |  Date 2nd of April 2021 Being vegan does not stop us from baking.  Just because we don't use eggs or dairy doesn't mean we get left out.  You can, if you want, spend time and money in the supermarket looking for that accidentally vegan stuff or you can make your own.  There is nothing wrong with buying buns and bread; however, making your own is much more fun and you get to control the ingredients, so this is especially good if you have specific dietary needs.  These hot cross buns are wholemeal, vegan and devious!  Because they are wholemeal, theze buns will be a little heavier than then plan white counterpart.  Makes 6 buns Ingredients 150 ml unsweetened vegan milk 25g vegan spread or butter 250g strong white or wholemeal bread flour 3.5g  fast action yeast 35g golden caster sugar Orange or lemon zest 1 heaped tsp cinnamon 1 heaped tsp mixed spice 35g sultanas 25g mixed peel 1/4 tsp salt Apricot jam for the glaze (Look for a smooth jam) For the

Vegan Easter or Passover Dinner

Image
Written by  McDonald, T.    |  Date 19th of March 2021 Whether you are celebrating Passover or Easter, this is the vegan dinner you where looking for!  It's a typical dinner around Easter that i have veganized for us vegans.  It's also fine for your passover feast too, but it is not the Seder meal.  Easter and Passover have many connections since the Last Supper was the Passover meal that Jesus and His disciples ate together.  For Christians, the last supper is where the Eucharist and the breaking of bread comes from and was the occasion Jesus had passover with His disciples (Luke 22:7-13).  Jesus said: ' ...unless you eat the flesh of the Son of Man and drink his blood, you have no life in you . ' (John 6:53).  Since the passover story has a lamb sacrificed at the temple at night, this dinner would usually have roast lamb.  Since lamb is out of the question for vegans, i had to come up with something else.  I have tried a variety of mock meats with some better than ot

Best Vegan Websites

By McDonald, T.   |  Date 2nd of November 2020 If you are looking for that special present for someone or even just yourself, take a look at these sites. All the sites in the blog have vegan and plastic free products and some even sell some food. All sites, however, are mainly about the bathroom and kitchen.  Although each site is similar and provides similar products and brand names, all are a little different.  All sites do gift packs and have a good selection of men's toiletries. Being vegan and going plastic free has never been so easy. Enviroli   What does it sell? Eco-friendly and plastic free products. Sells a reasonable range of goods for a new or experienced vegan form a range of different brands. Vegan toiletries. Bathroom stuff.  Kitchen stuff. Home Baby things. Pets stuff.  This is perhaps my favourite in that I have used it many times and it has my washing detergent which is TruEarth.  I found great gifts for people at this site. Animal Aid    What does it sell? Anima

The Walk Of Witness

Image
By T. McDonald   | 20 April 2019 People from churches all over Newmarket gathered together at the Bill Tutte memorial on Good Friday morning for a service. The service included singing and readings at two locations around Newmarket with a walk of reflection in between. The Bill Tutte memorial was the location of the first stage of the two part walk of witness. The service started at 10:45am with a reading and some singing in glorious sunshine. As I sat listening to the singing, I could not help noticing the variety of people attending the event from young to old. Furthermore, the vibe of the crowd was very friendly considering the large size of it; it was not intimidating in the least. Immediately after the singing, we walked down the main road then to the guineas to the next location. As we walked, a lady said to me that we should walk in silence and reflect upon the Easter message, so I did as she asked. I found it difficult, however, to imagine what it would have been
