Vegan Kugel

Written by McDonald, T.   |  Date 19th of September 2022      Rosh Hashanah is a Jewish festival for new year starting on the 25th this year, which is this Sunday.  However, whatever year it is or even if you are just looking for something different, let me introduce you to this traditional Jewish dish .  This dish can be thin or deep pan, but is always crispy around the edges.  Although the original recipe uses egg, we can make it vegan by using flaxseed as the egg replacement.  You, can, of course, use something like cracked or just egg, but the flaxseed is fine to use if that is all you have.

Black And White Bean Stew

  Written by McDonald, T.   |  Date 12th of September 2022 Beans are highly underrated.  There are many types, colours, and shapes of bean to be had, all of which have amazing nutritional value.  With this in mind, why not try this fantastically tasty white and black bean stew?  The black beans stain the white beans changing their colour and are a great source of protein. 

Nan's Bread Pudding

Written by McDonald, T.   |  Date 9th of September 2022 As a boy in the 70s and 80s, I used to love my bike, my pets, my Nan, and my Nan's cooking.  Obviously, I loved my parents and Pop too.  Whenever I was feeling down or if school was getting to be a bit much, my Nan would make the most amazing Bread pudding.  A chunk of the dark brown goodness more than made up for the threat of nuclear war.  It was so sweet and tasty with a crusty sugar coated top layer.  You can serve it with cream, ice-cream, custard or even on its own with sugar sprinkled on top.  Thank you, Elsie!

Nut Roast and New Potatoes

By McDonald, T.   |  Date 2nd of September 2022 At some point, everyone without a nut allergy is going to try this classic vegan dish.  You can get different types of nut roasts, but the two I have triad are Cashew Nuts And Country Veg and Cashew Nut and Cranberry . Both of them are great and will feed 3-4 people although it says it will only feed 2-3.  All you have to do is mix it up, put it in the baking try provided and put it in the oven and in 40 minutes you got a great dinner.  By going vegan, you will not just be helping yourself, you will be helping the planet and the animals too.  Please also consider your waste when buying food.  Look at things like packaging.  Buy loose veg if you can.
