Baked Sweet Potato

Written by McDonald, T.   |  Date 31st of October 2022   Whether you call them Jacket potatoes or baked potatoes they're always great, so how about using a sweet potato instead of a white one? Sweet potatoes are actually sweet in taste and packed full of vitamin A.  Additionally,  there're orange in colour on the inside with a brown skin on the outside.  Notably, I find they cook quicker than white potatoes and are definitely softer after cooking.

Written by McDonald, T.   |  Date 11th of July 2022       I saw the recipe for this on social media from Bosh and decided to recreate it with a few tweaks.  It turned out every bit as good as I had hoped, but there is one thing I would do differently.  I changed the lemon to lime, used onion instead of onion powder and garlic paste instead of garlic powder.  In addition, I added a few Italian herbs and the results were amazing!

By McDonald, T.   |  Date 10th of January 2022 Looking for a hearty meal on a cold winters night?  This is an outstanding vegan dinner that tastes every bit amazing as it sounds unusual.  If veganuary is something you have done for the first time, let me introduce you to this classic combination.  You can have any topping that you like with the potato, such as: Salsa and avocado .  Vegan cheese and beans . Vegan chilli topping. Chilli Tuno .  Tuno and vegan mayonnaise Home-made vegan coleslaw .   As for the jacket potato, there are different ways to prepare it: Crispy jacket Soft skin For the soft skin, wrap in tin foil.  For a crispy skin, cover in salt water and bake for 20 minutes then remove from the oven and coat in oil then retune to the oven until done.   Once you have decided how you want your jacket potato, you will need to deicide if you want a sauce to go with the steak and if so, what sauce do you want?  Options are for example: Peppercorn sauce Honey and mustard sauce  H

Tuno & Mayo More Like A Tin Of Bogies!

Written by McDonald, T.   |  Date 17th of September 2021 I have had Loma Tuno before, but it was the chilli one.  This time i decided to try the Tuno and May, but i wished i hadn't!  I had it with a jacket potato and topped it with some olives. Even after adding copious amounts of vegan mayonnaise, and bang bang, vegan salad cream and more vegan mayo i could just about eat it. Jacket Potato With Vegan Cheese And Onion

Written by  McDonald, T.    |  Date 19th of April 2021 Jacket potatoes are the best!  I love a good baked potato for a simple dinner.  You can have them with all sorts of filling that can be hot or cold.  This time i have opted for a cold filling.   Ingredients Vegan cheese  Bell pepper Garlic Olives Onion   Vegan mayo Cider vinegar  Method Great the vegan cheese Chop everything up and mix together Add the vegan mayo and the cider vinegar and mix again  Serve with the jacket potato I had mine with broccoli and cabbage with some nutritional yeast sprinkled on top for extra flavour and nutrition. Baked Potato With Beans And Cheese

    Written by  McDonald, T.    |  Date 10th of March 2021 This is a great meal that is as easy as it is timeless.  Suma make great vegan sausages with beans in a can.   Baked beans and vegan sausages are high in roughage and protein.  Put this combination with some vegetables and sprinkle it with some nutritional yeast and you have a nutritious meal.  However, this dinner is low in vitamin A, so adding some carrot could be a good idea or have carrot with your lunch.

Mount of Olives Potato with Vegan Chilli Topping

By McDonald, T.   |  Date 22nd of February 2021  Baked potato with this topping it truly delightful and delicious!  Its lovely fluffy potato flesh with a spicy topping with beans and lentils, which in turn is topped with olives, jalapeno peppers and vegan cheese is just amassing.  Definably a good one for a cold winters night. Ingredients   Largish potato Vegan cheese alternative of your choice  Olives 3 or 4 Jalapeno pepper 6-8 slices  For Chilli Chopped tomatoes x 50g. Tomato paste x 1 tbsp. Kidney beans x 10g Black beans x 10g Lentils x 10g Chilli powder x 1 tsp Cider vinegar x 1 tbsp Method If using dried beans, soak them overnight and boil for 30-40 minutes first.  Now add all ingredients for the chilli to the saucepan and bring to the boil then turn done to a simmer for 20 minutes. Yes, it really is that easy.   The baked potato will take anywhere between 40 - 60 minutes depending on the size of it.   Poor the chilli on top of the potato add the grated cheese, olives and jalape

Baked Potato And Coleslaw

By McDonald, T.   |  Date 15th of February 2021 Baked potatoes are a favourite of mine, so naturally I like to have a great list of optional topping and this is one of the best!  Creamy and taste 100% vegan coleslaw topping with salad and veg to balance the nutrition.  What you will need Biggish white potato Vegan coleslaw Salad Broccoli  Home-made coleslaw How to make home-made coleslaw .  Choose your style of potato When it comes to baked potatoes, there are two things to think about: what potato and who to cook it.  In other words, do you want a sweet potato or a white potato.  Do you what a soft east to eat skin or a crispy jacket?  Soft skin Just wrap in tin foil and bake for 40 minutes or so.   Crispy Jacket Rub in oil and salt then bake for 40 minutes or so.   Now all you have to do is add the home-made coleslaw.     I hope you liked this blog.  Please subscribe and share with your fiends. 

Jacket Potato And Chilli Tuno

By  McDonald, T.    |  Date 17th of Jan 2021 Jacket potatoes are great!  This one is with Tuno Thai Sweet Chilli and is a tuna fish alternative.Tuno have 3 flavours that i know of: Thai sweet chilli, Tuno in spring water and lemon and pepper. Ingredients  Jacket potato Tin of Tuno Thai Sweet Chilli Red bell pepper Sweetcorn  Spring onion  Method  Wrap the potato up in some tin foil or better still bake it in a dish with a lid for about 1 hr and 30 minutes.   Cut up the veg and mix it into the Thai Sweet Chilli Tuno then add it on top of the potato when it is ready with a little vegan mayonnaise on top.   Nutrition Backed potatoes are loaded with goodness, but i guess you want to know about the Tuno.  So, here it is:

Jacket Potato With Salsa And Avocado

By McDonald, T.   |  Date 12th of January 2021  When many of us think of winter, we think of stews and jacket potatoes.  When it comes to jackets, the subject of how to prepare them is hotly debated; however,  I like to prepare them in a simple way that leaves the skin easily edible.  Ingredients for the topping: Avocado Salsa A potato weighing about 320 g will take about 50 minutes on 200 degrees in a preheated oven.  I like to wrap them up in tin foil in order to keep the skin soft and easy to eat.  The inside will be soft and fluffy.  Once out of the oven, cut the potato open and give a squeeze to puff that potato up.  Add some vegan butter.  This is so easy.  Just add 2 tablespoons of Salsa to your jacket.  Now you have to decide if you want to mash the avocado or slice it.   You can serve this with salad or veg.  Please give a like, subscribe and share so others can find out about easy vegan meals.
