Written by McDonald, T.   |  Date 5th of February 2024 I found this dish in an old vegetarian cookbook and saw it would be easy to veganise.  I also added the vegan sausage, quinoa, and white pepper to liven it up a bit.  I was keen to try this one out after sprucing it up and discovered that it was much better than I could have ever imagined.

Vegan Egg, Sausage, and Bacon Pie

Written by McDonald, T.   |  Date 25th of September 2023   This is one of those recipes I used to make with my Nan as a boy.  It was always a favourite of mine and would only be made on special occasions.  This pie has a great combination of flavours without missing out on the oily textures associated with this classic 70s pie. Notes I used crackD egg alternative for the egg substitute. I used this isn't bacon lardons. I used naked taste vegan sausages. I used ready rolled short crust pastry for the store.  I found using a baking dish with a removable bottom helped a lot.  If the pastry domes when you blind bake it, prod it with a folk.    Makes a pie with dimensions of  Time, about 30 to 35 minutes. Ingredients Egg replacement x 150 g Vegan bacon lardons x 100 g Vegan sausages x 2 Red onion, finely chopped x 1/4  Salt x pinch Vegan cheese, grated x 30 g Short crust pastry x 200 g. Homemade Vegan Meatless Pie

Written by McDonald, T.   |  Date 21st of August 2023       I love a good pie and this is just what I needed!  Very simple and tasty. This pie is easy and has is reminiscent of a mince meat and onion pie.  I used TVP as the mince and flavoured it with balsamic vinegar.

Minted aubergine, courgette and couscous salad

I love this dish because it is tasty and goes well with a lot of things.  You have two options: use white rice or cauliflower rice.  I hope you chose the cauliflower rice option because it is so good!

Cauliflower Pizzaiola

Written by McDonald, T.   |  Date 29th of May 2023  I was surprised at how quick and easy this dinner was to make.   Pizzaiola or Carne Pizzaiola was originally an Italian meat dish.  However, the meat has been replaced with cauliflower and the cheese swapped for vegan alternatives to make it vegan. This is a wonderful dish that is high in vitamin C.

Hunter's Vegan Chicken

If you are trying out Veganuary for the first time and are still wondering how you will cope without meat, you really should try this during the new year.

Viking Skause

Written by McDonald, T.   |  Date 12th of December 2022 Abstract  Skause is a Viking stew, which contained, boiled meat, vegetables and Mead , an alcoholic drink made from fermented honey and included spices (What Viking Diets Were Really Like, 2021).  I wanted to make something vegan that a meat eater would think of trying.  Being as meat eaters, especially men, see themselves as being a little on the wild side, I needed something that would appeal to the old world fun vibe.  So, when I was looking through old recipes for inspiration, the Viking food immediately jumped out at me.  Bearing in mind I need to appeal to both vegans and especially non-vegans, the mock meat had to be good.  Unfortunately, the mock meat I intended to use, Naked strips, was not available, so I had to improvise.  This resulted in the idea to add three different types of mock meat to the dish.  I struggled to find suitable mock meats at such short notice.  Nonetheless, I settled on extra firm smoked tofu, a b

By McDonald, T.   |  Date 31st of January 2022 On a cold winter's night this is a great dish to turn to.  Comforting, tasty and vegan!  This is a dish that is loaded with nutrition and flavour.  Served in a ring of brown rice, topped with some vegan cheese alternative and garnished with some basil or coriander.

By McDonald, T.   |  Date 28th of June 2020 If you are looking for a light easy to prepare comfort food that is meat free, this is for you.  This dish is colourful, tasty and needn't be expensive.  To make this tasty dish vegan, swap the butter for a vegan alternative.   Serves 1 Ingredients Cherry tomatoes 1 Small carrot sliced longways 2 New potatoes 1/2 Red bell pepper 1/2 Avocado Spring Onions Slice of sourdough Butter/vegan butter Apparatus Small saucepan Large frying pan with lid Sharp knife Spatula Method Clean and cut the potatoes in half.   Boil in the saucepan until soft enough to push a fork though easily.   Drain potatoes and leave to dry and cool.   Cut the carrots into strips, cut the red pepper into bit size pieces and cut the cherry tomatoes in half.    Spray some olive oil in the frying pan, add the potato halves and carrot strips.   Cover with lid.   Cook on a low to medium heat, turning occasionally until potatoes start to turn g
