Vegan Cottage Pie

If you are looking for a traditional British dinner, you can't go wrong with this comforting and hearty meal.  It has been a popular dish in the UK for as long as I can remember.  The white pepper gives it a worm and spicy taste, which is great for those long winter nights.

 

Serves 4

Time, 45 mins

Ingredients

  • Potato x 420 g
  • Vegan milk x 80 ml 
  • TVP x 8 tbsp
  • Green lentils x 235 g (1 tin, rinsed and drained) 
  • Baked beans x 400 g (1 tin)
  • Swede x 100 g
  • Carrot x 140 g
  • White pepper x 1 tsp 
  • Sage x 2 tbsp
  • Salt x 1 tsp
  • Balsamic vinegar x 3 tbsp
  • Gravy granules times x 2 tsp + 100 ml of hot water + 1 or 2 tsps of yeast extract

Method

  1. Dice the carrot and swede into smallish pieces and boil in water until soft.  About 10 minutes. Drain the water out.
  2. Drain the water from the lentils and rise before adding to the carrot and swede into a medium-sized casserole dish. My dish is about 22 cm in diameter and 7 cm deep.
  3. Dice the potatoes and boil until soft enough to mash.  About 15 minutes.
  4. While the potatoes are boiling, make the gravy with 100 ml of boiling water and add to the veg.  You don't want too much gravy since the filling needs to support the weight of the mash. Add 3/4 of the white pepper and 3/4 of the salt to the dish with the lentils and veg. Add the sage, balsamic vinegar and baked beans.  Stir until combined. 
  5. Mash the potato with the remaining salt and white pepper. Add the vegan milk as you go so that you end up with a smooth, creamy mash that should spread easily over the top of the filling without losing its firmness. The mash should not be slopy.
  6. Preheat the oven to 160 °C. 
  7. While the oven is heating, gently spread the mash over the top of the filling, covering it completely. Use a fork to spread it so it leaves grooves in the mash.  
  8. Bake in the oven with no lid for 25–30 minutes at 160 °C.  The top should be golden brown.
Before going in the oven.

Dish up with veg of your choice.
