Traditional English Stew

Homemade Vegan Meatless Pie

Written by McDonald, T.   |  Date 21st of August 2023       I love a good pie and this is just what I needed!  Very simple and tasty. This pie is easy and has is reminiscent of a mince meat and onion pie.  I used TVP as the mince and flavoured it with balsamic vinegar.

Minted aubergine, courgette and couscous salad

Written by McDonald, T.   |  Date 14th of August 2023  Fresh tasting dinner.  The lemon and mint combine to create a fresh taste with plenty of flavour. The aubergine and couscous soak up lots of different flavours that go great with the different texture that the onion and bell pepper provide.

Vegan Bagels – Low Calorie

Written by McDonald, T.   |  Date 7th of August 2023   Fancy a little low calorie snack or something different for breakfast?  What ever the reason, these bagels are fantastic! So easy and only 143 cals each. Makes 2 bagels Time 30 minutes Ingredients 90 g of fat free vegan yoghurt 40 g of plain flour  30 g of wholemeal flour 1 tsp baking powder A pinch of salt  Sesame seeds (optional) Method  Mix the yoghurt, flour, salt, and baking powder into a dough. Knead until smooth. Knead the dough into donut-like shapes. Top with sesame seeds (optional) Place on a baking tray with a silicon sheet or dust with flour and bake at 180C for 20-25mins.
