Traditional English Stew

If you want a simple traditional, this is an excellent vegan version of this family favourite.  I never had this enough as a boy and found it made winter so much more bearable.  There is nothing flash about this stew and it just has a few ingredients.

Notes 

  • I used Plant Chef Meat Free Chunks because I like them.  I could have, however, used tofu.
  • I used GoldenFry instant gravy.



Serves 2

Time 40 minutes



Ingredients

  • Mock meat chunks
  • Parsnips
  • Carrots
  • Leek
  • Onion
  • Gravy
  • White wine vinegar
  • White pepper
  • Salt

Method

  1. Dice the carrots, parsnips, and onion then slice the leek. Add the vegetables to the pot.
  2. Make the gravy and add to the pot.
  3. Add the mock meat chunks.
  4. Bring to the boil and immediately turn down to a simmer.
  5. Cook for 35 – 40 minutes stirring occasionally.


Results

Served with steamed kale and potatoes.
