English Style Bean Stew

Written by McDonald, T.   |  Date 16th of January 2023 Just the thing for a cold day!  For a long time I held off trying this dish out because it didn't appeal to me much.  Once I did try it, I started to have it all the time.  This is a very easy meal to make and is extremely versatile.   You can have it with rice, roast potatoes, new potatoes, boiled potatoes or even mash potato.  You can have it with pasta or just on its own with some crusty bread.  Not only is the dinner packed with texture and flavour, it contains a lot of protein and roughage.

  By McDonald, T.   |  Date 2nd of August 2021 Are you new to veganism?  Do you want to try something special that is easy to prepare?  If so, this is the dish for you.  It is packed with flavour and easy to use.  When you first go vegan, it's vital to pay attention to nutrition just the same as any other diet; however, unlike a meat eaters diet, a vegan diet lacks B12.  For this reason, i add nutrition yeast with B12 to some dinners. Ingredients  Courgette  Carrot  Parsnips Kale Spinach  Broccoli  Red Bell pepper Chow mein sauce (you could make your own, but i just use a packet sauce) Garlic  Nutritional Yeast with B12 Method Cut the broccoli, carrot and parsnips into strips and fry in a frying pan until they start to go a golden brown.  Add the kale, spinach, garlic and bell pepper.  Add the chow mein sauce.  While this is on a low heat, spiralize the courgette and add it to everything else in the frying pan.  Cook for about 5 minutes and serve with a sprinkling of nutritional

No Beef Wellington And New Potatoes

By McDonald, T.   |  Date 15th of March 2021 This No Beef Wellington is great and can be a part of many types of dinner from something special like New Years dinner or as a midweek comforter.  It goes good with roasted veg or boiled potatoes.  This particular No beef wellington is from Wicked Kitchen.  It is wrapped in fantastic light flaky pastry and really does have a meaty taste.  Just under the pastry is a layer of mushroom and herbs.  Just take a look at that lovely texture and beautiful pastry! Kale And Bean Pasta Bake

By McDonald, T.   |  Date 4th of January 2021 On a cold winters evening you need something that is both feeling, taste, hot and full of comfort and cosiness.  This pasta bake does all that and is much better than it sounds or looks.  However, you can spruce it up a bit by adding more grated vegan cheese and toppings if you really wanted.   Serves 2  Time 1hr 40 minutes   Ingredients Base ingredients  60g Black beans. 40g Chickpeas. 70g Marrowfat Peas. 40g Red lentils. 50g Kale.  60g Courgette (zucchini). 100g Wholewheat pasta. Sauce ingredients  14 g Hot red chilli pepper.  10g Vegan red pesto. 2 tbsp Salsa. 1 tbsp Teriyaki sauce.   60g Chopped tomatoes.  2 tsp Paprika.  2 tsp Turmeric.  8g Nutritional yeast with B12.  Toppings 40g Vegan cheese of your choice grated. 40g Red bell pepper. 60g Tomatoes. Method  If you are using dried beans and lentils, you have to soak them in plain water over night and then boil them for 40 minutes before using them in this recipe. With beans it is al
