Vegan Sunday Roast

By McDonald, T.   |  Date 28th of Jan 2022 No Sunday in the UK is complete without a roast dinner.  This is a vegan roast that is simple and bursting with flavour.  For more roughage, keep the skins on because you don't really want to throw away all that goodness.   Amazingly, the sweet potato gives huge amounts of nutrition including a massive dose of vitamin A and some protein while the kale provides a great dose of vitamin K and the cabbage has vitamin C.  These vitamins are needed by the body for numerous functions, such as seeing in dim light and keeping the immune system healthy.  In addition, the kale provides some calcium, which good for bones and teeth. 

Aubergine Parmigiana

It has layers of aubergine, mushrooms and onion and topped with a tomato sauce and cheese. The name parmigiana suggests using Parmesan cheese, but since we are vegan, any vegan cheese will be fine.  This is a lovely dish for winter or autumn that is not heavy at all, so it goes great with potatoes.

Written by McDonald, T.   |  Date 21st of January 2022 Moussaka has been dubbed a Greek Lagrange because it has layers topped with Béchamel sauce.  In this vegan instance, the layers consist of aubergine and lentils and is topped with mash potato with Béchamel sauce.  Of course, the whole thing is topped with vegan cheese.

Sun-dried Tomato And Pasta

Written by McDonald, T.   |  Date 15th of January 2022  Ingredients  Pasta Cashew cream ( How to make cashew cream ) x 4 -6 tbsp Chopped tomatoes (canned is fine) x 200g Sun-dried tomatoes x 3-4 chopped Chopped mushrooms x 4 -5 Diced courgette/zucchini x 100g Cider vinegar x 2 Nooch x 1 tsp   Salt and pepper to taste  For the garnish  Fresh basil Sliced olives  Method Fry the onion in some oil. Cooke the pasta. While the pasta is cooking, add all the other ingredients to the fried onions.  Stir and leave to simmer on a low heat until the pasta is cooked.  Add the pasta to the sauce and serve with some basil and olives. Home-made Vegan Pepperoni Pizza: Deep Pan

Written by McDonald, T.   |  Date 14th of January 2022 If you can make bread, you can make pizza dough.  If you never made bread, don't worry; this is so easy!  I used to love pizza, so creating my own vegan pizza is something I have dreamed about for a long time.  Obviously, there are different types of bases, but this recipe uses a deep pan one, which is very bready.  One of my main worries was finding the right vegan cheese.  I remember seeing a post on Twitter stating how good Applewood vegan cheese was, so when I saw it in the shop, I jumped at the chance.

We Can Vegan Tikka Curry: My Review

  Written by McDonald, T.   |  Date 13th of January 2022       Sometimes you just don't have the time to make something, so here is another meal in a can this time by We Can.  It is a vegan tikka curry with chicken style pieces.   What I liked  This was great.  It had a mild spicy taste and a beautiful red colour.  In addition, the mock chicken pieces were amazing.  I would have this again and I am very much looking forward to the next time i have it. What I didn't like It seemed to lack vegetables.  This is easily solved by adding veg to it when cooking.  Moreover, I really thought it needed some sultanas, which is also easy to solve by adding them in while cooking.     I recommend trying this because it is superb.  You can get two meals out of each can if you serve with rice and add some vegetables to it. Written by McDonald, T.   |  Date 12th of January 2022 Why go out to eat when you can make it at home for a fraction of the price?  Going out for a Chinese was a treat in the past that I would look forward to.  Sweet and sour chicken balls were one of my favourites, so I decided to make a vegan option to this classic take-a-way dish.  I have already done a lot of reading and experimenting with batter, so this was always going to be easy.  If you deicide to try this, you will find it both easy and rewarding.  Enjoy!

Vegan chilli topping. Chilli Tuno .  Tuno and vegan mayonnaise Home-made vegan coleslaw .   As for the jacket potato, there are different ways to prepare it: Crispy jacket Soft skin For the soft skin, wrap in tin foil.  For a crispy skin, cover in salt water and bake for 20 minutes then remove from the oven and coat in oil then retune to the oven until done.   Once you have decided how you want your jacket potato, you will need to deicide if you want a sauce to go with the steak and if so, what sauce do you want?  Options are for example: Peppercorn sauce Honey and mustard sauce  H

  Written by McDonald, T.   |  Date 4th of January 2022 If you thought that making curry from scratch was difficult, think again.  In addition, perhaps one of the most famous curries in the UK is easily made vegan: Tikka Masala.  After much reading around, I found a combination of ideas that suited my needs for this recipe.  It doesn't lose any of the flavour and is completely vegan.  Subsequently, this is my interpretation of this timeless classic. It has the spices that give it the flavour you would expect, but has extra nutrition.  I used cashew cream instead of dairy cream and added a few extra vegetables.  This is one you really have to try for veganuary.

Vegan Sweet And Sour

By McDonald, T.   |  Date 1st of January 2022 This dish would usually have chicken, but we are going to have Quorn pieces instead.  However, you could use tofu, which I love to do.  The ingredients can vary, but there is a main core of ingredients such as pineapple, bell peppers and carrot.  Options would include using mushrooms and peas, for instance.  Sometimes nutritional needs will change the ingredients while another time what is in the fridge will determine the ingredients.  Notes You can use a jar, but it is not as rewarding. Ingredients Quorn pieces or tofu x 50g Carrot x 1 Parsnip x 0.5 Kale x a few leaves Cabbage  x a few leaves Spinach  x a small handful Red bell pepper x 0.5 Pineapple pieces x 0.5 Nooch x 1 tsp Brown Rice x 0.33 of a cup Sweet and sour sauce   Method Cut the carrot and parsnips into strips and fry with the pineapple and Quorn pieces.  Boil the rice until tender.
