15 Easy Vegan Meals For Beginners

Written by McDonald, T.  |  Date 19th of January 2022

You have decided to join in the fun with veganuary, but you don't know where to start.  Don't worry, 'How do I be a vegan' is a common question.  First, vegans don't consume any meat, fish, dairy or eggs.  With this in mind, newbies wonder what they are going to eat.  You don't just want to eat lettuce and grass, right?  The good news is that you are living in an age of the vegan, meaning that we have plenty of meat replacements, which are sometimes called mock meats or fake meats.  When trying out a vegan diet for the first time, it may be a good idea to try the mock meats first since most people find them a great compromise. Mock meats easy the transition.

1. All Day Breakfast

Got to be a favourite with the newbie vegans.  Yes you can get vegan bacon and vegan sausages so not to worry. Part of the fun is testing out all the new and old brands and different types of mock bacon and sausages: then telling others what you discovered and if you liked it or not.  At the time of writing this, the best place to go is to the local supermarkets since they have a magnificent range to choose from.  However, be sure to look around many different supermarkets and try out things that catch your eye.  Listen to what people are saying on social media about they own experiences of mock bacon and sausages too and try out people's suggestions.

An all day breakfast is easy and quick.  Have the mock meats with the usual such as mushrooms and beans (but not peas! Lol) and a nice tomato or what ever you would usually have with your fry up.

2. Roasted Vegetables With Crispy Tofu

3. Vegan Lemon Garlic No Chicken

This is great if you want to impress some special. Although it is easy to make, it yields a fantastic dish that looks good and tastes great! The lemony gravy is so different and you can replace the chicken with any meat substitute that you like.

4. Vegan Pie And Mash

What a classic dish!  Yes, you can get a massive range of vegan pies from all sorts of pie makers.  Every different type of pie is available in vegan options.  I like the vegan mince beef and onion pies, but you can get full on veg ones with chick peas and butternut squash.

5. Vegan Kebabs

What a treat this is! Very easy to prepare, is fun and exciting. This is one of my favourites because it is easy to make and tastes so good. I can eat the pieces as they are or pull the whole kebab off into some homemade flatbread, fantastic! Just look at how bright those colours are and imagine hoe wonderful it will taste.

6. Courghetti and Mushrooms in Peppercorn Sauce (Vegan)

This is much more like a vegan meal that many people would expect and has that fun and different sort of vibe about it.  Courghetti is spiralized courgette/zucchini in place of pasta spaghetti.

Carrots, parsnips, cabbage and mash potato with gravy

7. Vegan Blood Stew

No, it is not made out of vegans, but it does use grape juice in the gravy. This has got a unique flavour that is comforting as a sweet gravy should be. Easy to make and impressive.

8. Baked Potato And Coleslaw

You don't have to top it with coleslaw, you can have it with any topping that you like. However, even making your own coleslaw is easy, so why not give this tasty treat a try? All you have to do is put it in the oven; no fuss.

11. Spaghetti And Meat Free Balls (Vegan)

You have a variety of meat substitutes to chose from, including Plant Chef, which is my current favourite.  If you are missing an old classic, try this.  Never fails to satisfy!  As a bonus, this is so easy to make.

12. Zughetti and spicy mushrooms (vegan)

This is very easy and ready super quick.  Spiralized courgette/zucchini takes the place of the noodles while the mushrooms are cooked in a spice tomato sauce.  It is not only colourful but tasty too.  This is great if you are looking to keep the calories low.

13. Vegan Steak

There are several options to choose from, but I like the Plant Chef one best.  However, any of the other are great too, including VivEra and NoBull.  A part of the fun of being a vegan is trying out all the different option and forming your own opinions on what you like.

14. Vegan Gado Gado

You can choose to use mock meat or tofu or neither in this hugely tasty Indonesia dish.  Green beans, chillis and other veg are served on a bed of rice with peanut butter sauce. Have to say, this is worth the effort, not that it takes much effort.

15. Creamy Butter Tofu Curry

Although this is a mild curry, you can make it hotter.  This is very easy to make and doesn't take much time either.  Obviously, you could look up how to make any curry that you want or look for a new one that you like the sound of.  The point is, curry is very easy to make, but you probably didn't know that.  We usually just sub the meat and dairy for mock meat or tofu and use vegan cream or yogurt or even cashew cream!
