Vegan Kebabs

Vegan Kebabs are an easy and fun dish with great flavours.  I chose to use a combination of beyond meat and tofu for the meat substitutes, which worked out very well.  The main part of this dish is the kebabs, so the salad can be what ever salad items you like.  I decided to have potato wedges because i was just in the mood for them and potato does add a lot of nutrition and carbohydrate to this meal, which otherwise would be very one-sided on the protein.  I chose the beyond meat because of the flavour and protein content and i chose the tofu again for protein and for the different texture.  In addition, it is fun to serve with home-made flatbread.  You can put a kebab in the flatbread and use the flatbread to pull the food off the skewer.  Then you can eat it like a sandwich. Fantastic!

The beyond sausage meat was great! I am new to this mock meat and I was very impressed with it.  It behaves just like meat before cooking and during cooking releasing an oily flavourful substance.  The one draw back is the price; it was really expensive! However, it did taste great and had both a meaty texture and taste.  I found that half a sausage/link was enough for one persons kebab with all the other items such as the tofu.  Remember that you can use any vegetables that you like and change this dish to suit your needs. 

Serves 2

Ingredients 

  • Potato x 360g
  • Paprika
  • Salt
  • Cayenne pepper
  • Cucumber
  • Lettuce
  • Beetroot
  • Celery

For kebabs

  • Beyond Sausage meat x 1 link
  • Tofu marinaded x 100g
  • Yellow bell pepper
  • Red bell pepper
  • Mushroom x 4
  • Courgette/Zucchini 
  • Tahini

Method 

  1. Press the tofu for 3 hrs.  Cut into chucks and marinate it all night if you can.  
  2. Cut the potato into wedges and sprinkle the spices on top and spray with a little rapeseed oil.  Bake in the over for 25 -30 minutes.
  3. Add all of the kebab items to the skewers while the potato is in the oven. You should get 6 kebabs. The kebabs will take about 20 minutes.
  4. Prepare the salad.
  5. Serve the kebabs, wedges and salad on a plate.  If you want, you can use pitta bread to slide to kebabs of the skewers. 



 

To finish this dish off, drizzle some Tahini over the kebabs.  

Tips for the marinade 

Keep it simple.  I use cider vinegar, vegetable stock and some spices.  I might even add a little brown sugar if after tasting i think it needs it.  For extra texture, freeze and then thaw the tofu before pressing it. 

Nutrition 

Tofu is a great way to improve you nutrition if you are a vegan.  The tofu adds calcium and protein to your diet.  I choose extra firm tofu because although it has more calories it is higher in protein and calcium.
