Vegan Tuna Mayo: Jackfruit Version

By McDonald, T.   |  Date 12th of February 2024 I used to like tuna mayonnaise, so when it came time to try out so vegan alternatives, I was mighty pleased.  I have tried this recipe before with chickpeas ( chickpea tuna mayo ) and it turned out much better than I expected.  This time I plan to use jackfruit and make it a lot more friendly for IBS or anyone trying a FODMAP diet for a sensitive gut.  Although I was a little disappointed with the colour of the dish, the chives made an excellent swap for the onion and it tasted great.  It did look more like crab than tuna though. This could have been down to the brand of jackfruit I was using. Finished product lack colour. Notes The original recipe used spring onions, which are high FODMAP unless I just used the green bits, but that just seemed like a waste.  With this in mind, I searched for an alternative to onion and found chives. White wine vinegar is low FODMAP, but other types like cider vinegar are not. Serves – 4 Time, 10 minutes

Spicy Carrot and Parsnip Soup

Written by McDonald, T.   |  Date 20th of November 2023 This soup is surprisingly sweet.  Both the carrots and the parsnips have a sweet taste; however, the sweet spicy flavour of the Green Ginger Wine just takes it to a new level.  I like this soup because it is so tasty and filling.  Furthermore, it provides a huge amount of vitamin A.

By McDonald, T.   |  Date 31st of July 2023 At first, I thought this was not going to be that good.  How wrong I was!  This is truly great in so many ways.  It tastes great and has a superb texture.  It is great in a sandwich or on a jacket potato as a topping.  Easy and cheap to make; you will not regret making this.

Sun-dried Tomato And Chilli Hummus

Daniel Chilli Hummus

Daniel Fast Unleavened Bread

No Knead Rolls

Written by McDonald, T.   |  Date 7th of January 2022  Bread rolls can be easy to make and next to no time to prepare with this easy method that requires no kneading.  Imagine what you could have in the roll!  Anything you like.  You just spend 5 minutes the night before preparing it and 10 -12 minutes in the morning baking it.  

No Knead Vegan Crusty Rye Rolls

Written by McDonald, T.   |  Date 9th of August 2021 I love bread!  These rolls are quick and easy to prepare and the rest of the time is just waiting.  If you want a no fuss bared, this is it! Makes 4 large, 6 medium or 8 small crusty rolls. Waste Short term waste: Zero  Long term waste: Flour packaging Yeast packaging Salt container    Sugar package  Ingredients  1.5 cup of self raising flour (195g) 1.5 cups rye flour (195g) 2g of instant yeast 1 tsp of salt 2 tsp of caster sugar  310ml (1.25 cups) of warm water Method Step 1 Mix all the dry ingredients together in a big bowl. Add the warm water a bit at a time and stir until you get a very sticky dough, see figures 1 and 2. Cover and leave for a minimum of 3 hours (i leave mine overnight on the counter in the kitchen).  Figure 1, make a well and poo in water. Figure 2, mix until you get a sticky grey dough. Step 2 The dough should be puffed up and bubbly, see figure 3 Use a spatula to gentle scrape out the dough onto a work board. 

How To Make Guacamole

Written by McDonald, T.   |  Date 30th of July 2021 Guacamole makes a great dip or sandwich filling.  You may have bought it from a shop in the past in which case you know it comes in a plastic container, which you might not know is harmful to the wildlife. Thankfully, it is easy to make and if you shop wisely picking out the loose veg it can be completely zero waste too. Waste Zero package waste if you buy the ingredients loose. Serves 3-4 Ingredients  Avocado x 1 large Garlic x 3 gloves Tomato x 1 Pepper 20g Onion 20g Lime x 1/2 Method Mash the avocado in a bowl. Chop up the tomato, garlic and pepper then add them to the avocado. Add the lime juice and mix. Store or serve. Please like and share with your friends.

Zero Waste Vegan Sandwich

Written by McDonald, T.   |  Updated 6th of July 2021 This is a quick and easy lunch that is packed with goodness and it is zero waste.  Making your own bread can be time consuming and work intensive, but this flatbread is easy.  I was very surprised at the results and now make it all the time because it is simple.  The filling is equally as easy and so worth it.  The garlic really comes throw and the mustard gives it that stronger flavour. Ingredients Flatbread home-made or sweet potato flatbread Avocado  Red bell pepper Chilli pepper Garlic  Mustard Method Scrape out the avocado into a bowl and mash it. Chop up the chilli and garlic and add them to the mashed avocado. Mix in 1 or 2 tsp of mustard.  I use the mustard and horseradish, but any mustard will do.  Spread on the home made flatbread and add slices of bell pepper.  Fold the bread and eat.  You can, if you wish, sprinkle a little nutritional yeast with B12 over the filling or try the sweet potato flatbread .

Rebel Region Hasperat Wraps

Subsequently, i and many others noticed a Bajoran food called hasperat in Deep Space Nine.  Although it is not clear what Hasperat is, this is my interpretation of this classic DS9 food.  If you want to know how i arrived at this recipe, please read my report on it titled, Rebel Region Hasperat Wraps: the report. Waste Short term Tortilla wrapper (but only if you use the store bought ones otherwise it is zero)  Long term  Zero unless you make your own tortillas in which case you will have flour a bag and a glass bottle from the oil. Serves 2 Ingredients   Tortillas x 2 or 3 Avocado x 1    Onion x 1/2 a large   Gloves of garlic x 2   Bell pepper x 1/2 Mustard and horseradish x 1 tsp Method Part 1 Cut the avocado in half, remove the stone in the middle and scrape out the avocado into a bowl with a spoon.    Mash the avocado with a folk. 

Vegan Hasperat

Written by McDonald, T.   |  Date 24th of May 2021    Hasperat is a favourite of the Bajoran in Star Trek DS9.  Being a Star trek fan, naturally, i want to eat it a lot.  Some people say it is a stew while others say it is like a burrito, but everyone claims it is spicy.  This recipe is for the burrito and is low in package waste.  If you can get lettuce or baby spinach without the waste then by all means add it. Ingredients  Spice Hummus Cucumber Bell pepper Created carrot  Orange White cabbage Onion Method Made the home made hummus. How the make Hummus . Spread some hummus down the middle of the tortilla and add the veg and salad   Now fold the bottom up and one of the sides over  Now put some more hummus on the side you have just folded over and fold again. Chilli Hummus Home Made

Written by McDonald, T.   |  Date 24th of November 2021      This is a quick and easy recipe that has no added salt or sugar.  I have also tried to keep the waste down to a minimum.  The lemon gives it that fresh taste while the chilli adds a little heat.  This dish is surprisingly creamy and has a smooth texture.  Great for those burritos! Waste 1 tin can  I have added paprika to make it look better but it is not needed for the recipe.  The chilli peppers may or may not come in a plastic bag, so you may have to look around or leave it out.  Obviously, there are options to this recipe, but this keeps it as close to zero waste as possible.  If you leave in and area that seals loose chickpeas then great! Ingredients Lemon x 1 Chickpeas x 1 can Chilli pepper x 1/4 tsp Garlic cloves x 4 Olive oil Method Cook the chickpeas for about 20 minutes.  No need to peel the chickpea just drain and run some cold water over them. Vegan Bread Roll Recipe

Written by  McDonald, T.    |  Date 9th of April 2021 One way of cutting out the single use plastic is to make your own rolls.  Baking is fun and easy, but you will need to practice it to get the best results.  Another advantage to home baking is you control the ingredients.  Wholemeal is better for us because it has more nutrients and roughage. Makes 4 rolls Ingredients  Strong wholemeal bread flour x 1.5 cups Caster sugar x 1 tbsp Salt x 1/2 tsp Instant fast acting yeast  x 3.5g Vegan butter x 20g Soya milk x 1/4 cup Water x 1/4 cup Method Stage 1 Wash your hands Add the flour, salt and fast acting yeast to a medium to large mixing bowl and stir to combine. Heat the vegan milk and water in a saucepan the add the vegan butter and wait for it to melt. It is important not to let the milk boil.  Make a well in the mixture and add the vegan milk and melted vegan butter.  Be sure that the vegan milk and butter is not to hot or it will kill the yeast.  Mix together with a spoon until you g
