Aubergine Steaks in tomato sauce with fried tofu

This is a quick, easy and very tasty dinner that will leave you wondering why you ever thought you needed meat.  The tender, juicy, flavoured aubergine is a joy in its rich tomato sauce.  If it is accompanied by fried tofu and some veg, it becomes a fabulous meal. Please, don't miss this one.

Notes

  • When it comes to flavouring the aubergine, I like to use what I fancy that day.  Often, I put leftover vinegars and bine with some spices in a jar and just use that as a marinade.

  • Don't slice the aubergine too thinly.  Keep it to about 1 cm thick.

Ingredients 

  • Aubergine x 1/2 cut into long slices
  • Soya sauce x 1 tsp
  • Salt to taste

Tomato sauce

  • Chopped tomatoes x 150g
  • Fresh basil x a few leaves
  • Cider vinegar x 1tbsp

Method

  1. Prepare the tofu the day before. How to prepare tofu.

  2. Heat some vegetable oil in the frying pan.

  3. Cut the tofu into bite size pieces and add to the frying pan.

  4. Slice the aubergine long ways and coat with oil in the frying pan.  Add the salt and soya sauce, then fry on both sides for about a minute on a medium heat. 

  5. Add the flavours to the aubergine. 

  6. Add the tomato sauce to the aubergine, turn the heat down and continue to cook.  

  7. Add the fresh basil.

  8. Keep an eye on the sauce.  Once the sauce starts to thicken, it is ready. 

  9. Serve with vegetables and new potatoes.  Garnish with more basil.

Results

The is so good.  The combination of flavours is fantastic.
