Vegan Mince And Onion

Fancy a traditional English dinner?  This is one of my favourites and is easy to make vegan. Textured vegetable protein (tvp) has been around forever and is great when mixed with green lentils.  You will get great textures, flavours and a good dose of protein.

Serves 1

Ingredients

  • Green lentils x 25 g
  • TVP x 3 heaped tbsp
  • Onion x 40 g
  • Carrot x 25 g
  • Yeast extract x 1/2 tsp
  • Instant gravy x 120 ml
  • Cider vinegar x 2 tbsp
  • White pepper x 1/2 tsp 
 Serve with new potatoes and vegetables.

Method

  1. If using dried lentils, you will need to cook them for about 35–40 minutes first.  If using tinned, drain and rinse before using.
  2. Fry the onion in a little oil in a suitably sized saucepan until it turns translucent. 
  3. Prepare the tvp as directed on the packet.
  4. Add the lentils, tvp and diced carrot to the saucepan.
  5. Make the gravy and add it to the saucepan. 
  6. Add the cider vinegar, yeast extract and white pepper and stir. 
  7. Leave to simmer for 5–8 minutes.
