Lemon Pepper Tofu

Fresh, lemon and zesty!  This is great in the summer when you need something that makes you feel fresh and clean.  It's very easy and quick and is made with fresh lemon and cracked black pepper.  I love to have it with rice, quinoa, or potato and vegetables, but it's great with anything.

Notes

If using arrowroot powder instead of cornflour, remember that it will thicken very quickly, so add it in right at the end just before you are about to serve. 

Serves 1

Time - about 20 mins

Ingredients

  • Tofu x 200g
  • Black peppercorns, ground x 1 tbsp
  • Lemon zest 
  • Lemon juice x 1/2 a lemon
  • Cider vinegar x 1 tsp
  • Cornflour or arrowroot x 2 tsp
  • Salt x a pinch

Method

  1. Dice the tofu and start to fry in a little oil. 
  2. Zest the lemon.
  3. Juice ½ a lemon and add the cracked pepper
  4. When the tofu is ready, add the lemon zest and juice to the pan with the tofu. 
  5. Add a tsp of cornflour in a bowl and mix with a little cold water to make a slurry.
  6. Add the slurry to the pan and mix until you get to your desired thickness. This should take only a few minutes.
