Sticky Ginger Tofu

You're going to love this because it's so easy and fun. It's ready in 15 - 20 minutes and needs little preparation. It goes well with rice, quinoa or potato and tastes delicious. The tofu provides a good level of protein and calcium and ginger has always been seen as a healthy gut food.Notes
- Brown sugar is best as white sugar will be too sweet and alot more cals.
- Make sure you get unwaxed lemons
Serves 1
Ready in 20 minutes
Ingredients
- Tofu x 110 g
- Ground ginger x 1 tsp or 3 tsps of fresh chopped ginger
- Brown sugar x 2 tsp
- Cider vinegar x 2 tbsp
- Soy sauce x 2 tbsp
- Lemon juice x 1
- Zest of 1 lemon.
- ¼ medium onion
Method
- Dice the tofu into bite sized cubes
- Dice the onion.
- Fry tofu & onion in a little oil.
- Mix everything else in a small bowl to make the sauce.
- Fry the tofu so until it starts to darken on all sides.
- Add the sauce you made before the onions darken too much. Keep stirring on a medium heat.
- When the sauce starts to thicken, you are done.
