Lemon Potatoes

If you love potatoes as much as I do, you will love this dish too!  Very simple, but will add that extra layer of taste to your meal.  Potatoes are a great source of carbohydrate, are sweet and delicious.  You can serve these on their own or with your main meal. 

Notes

  • I used a whole stock cube in 250 ml of boiling water.

Serves 2

Ready in 45 minutes

Ingredients 

  • Potatoes x 300 g
  • Juice of 1/2 lemon
  • Garlic paste (optional)
  • Olive oil x 2 tbsp
  • Vegetable stock x 250 ml

Method

  1. Cut the potatoes into wedges and place in a well oiled roasting pot with a lid. 

  2. Make up 250 ml of vegetable stock and mix in the lemon juice. 

  3. Add the lemon juice and stock to the pot with the potatoes. Put the lid on and roast in the middle of a preheated oven at 200C for 30 minutes.

  4. Remove the lid and put back in the oven for 15–20 minutes at 170°C until the potatoes have completely absorbed all the liquid. It's a good idea to keep an eye on them at this stage.

  5. Serve hot or cold.
