Vegan Shepherd's Pie

This traditional British dish is traditionally made with minced lamb, but we are going to use a tried and tested vegan alternative of green lentils and tvp. I find this dish fantastic for brighting up any dull day. Its richness in tastes and textures make it a sensational delight for any day in the week.
Notes
You might wonder what is the difference between Shepherd's pie and Cottage pie. Traditionally, the main difference is Shepherd's pie is made with lamb while Cottage pie is made with beef. However, The difference in the vegan counterparts is Shepherd's pie is made with mint sauce while Cottage pie is made with yeast extract. Otherwise, they are pretty much the same.

Serves 2
Ingredients
- Green lentils x 60 g
- TVP x 6 tbsp (35 g)
- Onion x 120 g
- Gravy x 300 ml
- Mixed veg x 140 g
- Mint sauce x 3 tsp
- White pepper x 1/4 tsp
- Salt x 1/4 tsp
- Mash potato x 350 g - 400 g
- Nutritional yeast (optional)
Method
- If using dried lentils, cook as per instructions on the pack.
- Start to boil the potatoes.
- Prepare the tvp as per instructions on the pack.
- Dice the onion and lightly fry it in a little vegetable oil until they start to turn translucent in a medium sized pot.
- Add the cooked lentils and prepared tvp and fry with the onion for a minute or two while continuously stirring to avoid burning.
- Prepare the gravy as instructed on the packet. Add the gravy to the pot.
- Add in the mixed vegetables, white pepper, salt and mint sauce then stir.
- Leave to simmer until potatoes are soft enough to mash.
- Mash the potatoes when ready with a pinch of salt, but nothing else. Ideally, the mash should be a bit crumbly, which makes it easier to add to the top of the filling
- Pour the mince into a baking dish and spoon the mash on top.
- Place in the oven for about 20 minutes at 170 °C or until the mash starts to brown.
- Allow to stand for 1 minute before serving.
