Vegan Fried Rice

I used to eat this dish all the time when I was younger.  I used to like it with a generous helping of sweet and sour sauce.

Ingredients

  • Brown rice x 50 g dry
  • Tofu x 100 g
  • Mixed vegetables (frozen or fresh as long as they are diced small)
  • Red bell pepper x 80 g
  • Onion x 1/2
  • Soy sauce x 2 tbsp
  • Cider vinegar x 1 tbsp
  • White pepper x 1/4 tsp

Method

  1. Precook the rice.
  2. Dice the tofu, onion, and bell pepper and fry in a frying pan until the onion turn translucent.  
  3. Add the precooked brown rice and mixed veg. 
  4. Keep stirring for 5 minutes
  5. Add the soy sauce, cider vinegar and white pepper. 
  6. Stir for another 5 minutes and serve.
