Vegan Fried Rice

I used to eat this dish all the time when I was younger. I used to like it with a generous helping of sweet and sour sauce.
Ingredients
- Brown rice x 50 g dry
- Tofu x 100 g
- Mixed vegetables (frozen or fresh as long as they are diced small)
- Red bell pepper x 80 g
- Onion x 1/2
- Soy sauce x 2 tbsp
- Cider vinegar x 1 tbsp
- White pepper x 1/4 tsp
Method
- Precook the rice.
- Dice the tofu, onion, and bell pepper and fry in a frying pan until the onion turn translucent.
- Add the precooked brown rice and mixed veg.
- Keep stirring for 5 minutes
- Add the soy sauce, cider vinegar and white pepper.
- Stir for another 5 minutes and serve.
