Baked Sweet Potato

Whether you call them Jacket potatoes or baked potatoes they're always great, so how about using a sweet potato instead of a white one? Sweet potatoes are actually sweet in taste and packed full of vitamin A.  Additionally,  there're orange in colour on the inside with a brown skin on the outside.  Notably, I find they cook quicker than white potatoes and are definitely softer after cooking. 

Each potato is different; therefore, may take different times to bake perfectly.  As a guide, an average size potato will take around 50 to 70 minutes.  50 minutes is a good place to start. 

Method 

  1. Choose a suitable sized potato.

  2. Scrub the potato with warm water and a veg scrubber. 

  3. Cut off any roots or suspicious looking bits.

  4. Use a folk to pierce the skin of the potato.

  5. Place in a dish with a lid and bake for 50 minutes, or until tender all the way through.

  6. Cut open the potato and make a space for the filling.  Add a knob of vegan butter if you wish. 

  7. Fill the potato with anything that you like. 

Results

I topped mine with vegan chilli mince and a blob of Lime Cashew Cream
