Carrot Cake Flavour Overnight Oats

Do you like carrot cake?  Yes, great! So, why not try out carrot cake flavoured overnight oats?  I know, you think that i'm having you on, but I'm not and it is such a great treat in the morning or anytime.  It still has that creamy taste and texture, but with a distinct carrot cake flavour and with the added bonus of vitamin A.

Serves 1


  • 1/2 a cup (40 g) of rolled oats 
  • 1 cup (250 ml) of soya milk 
  • 1 tsp of chia seeds  
  • 1 tsp of flax seeds 
  • 2 tsp of mixed spice
  • 15 g of fresh grated ginger
  • 20 g of dates 
  • 20 g of grated carrot
  • 1/8 tsp of salt
  • Some walnuts to serve


  • A jar


  1. Put the 1/2 a cup of oats into the jar with the chopped dates, flax seeds, chi seeds, carrot, ginger, mixed spice, sugar, and the salt into the jar.   
  2. Poor the soya milk in and give it a good stir.  
  3. Place in a fridge overnight.  Add the crushed walnuts just before serving.
