Mushroom And Walnut Pâté

Image
Written by McDonald, T.   |  Date 26th of November 2021  I used to really like pate before seeing the light and becoming a vegan.  Subsequently, I needed to find a vegan pate.  After many experiments, I think this is the one that hits the mark and satisfies my need for pate. Lovely mushroom flavour and great firmness.  As a snack, I love to have this on toast.

Vegan Special Fried Rice

By McDonald, T.   |  Date 22nd of November 2021 This is a great way to use that leftover rice.  Special fried rice was something I used to like but have not had since I became a vegan.  No need to look up recipes for this easy fast food recipe, which is highly versatile. Notes Choice of vegetables - this is really down to you just as long as it is chopped into small pieces.  Preparing the rice - I used brown rice in this recipe, but you can use white.  In either case, it is best to cook the rice the day before, let is cook and then store in the fridge overnight.  Serves 1 Ingredients  1/3 cup brown rice (before cooking) 50g extra firm tofu  50g of pineapple chunks  1 tsp curry powder  1 tsp ground ginger  1 tsp coriander powder 1/4 tsp paprika   1/3 tsp salt 20g onion 20g carrot 20g leak 2 mushroom 20g broccoli  1/4 cup of green peas Soy sauce to taste Apparatus  Small mixing bowl Frying pan Method Prepare ...

New Year's Dinner Ideas For Vegans

Image
By McDonald, T.   |  Date 19th of November 2021 You really need to start planing now and to make your orders or you might miss out.  If you are a traditional English person, you will be looking for that ideal roast dinner that makes everyone's New Year's day.  However, if you have just turned vegan, you might find it easier to find that special dinner if you are prepared to think outside of the box. Since New Year is only a few weeks away, it is best to start think and preparing for it now. Furthermore, it is a good idea to have a dress rehearsal to find out what you like best. No Beef Wellington This is a great one for any New Year or Christmas.  Have to say, that I was really impressed with the Wicked Wellington for Wicked Kitchen.  This is one of those dishes that you just got to try because trying to explain it would never do it the justice it deserves.  The mock meat in the middle is covered in a mushroom coat and wrapped up in a light flaky past...

Veg, Pasta and peppercorn sauce (Vegan)

Image
By McDonald, T.   |  Date 10th of November 2021 If you are feeling the cold, this will keep you warm and happy. This is a dinner that is packed with taste and that little bit of energy to keep you going in the dark winter months. It consists of pasta, mushrooms, sweet pepper, carrot, parsnip and courgette, but you could add any veg that you like. The sauce is a creamy peppercorn sauce, which you may have to make yourself if you want to keep it vegan. For best results, fry the carrot and parsnips until they start to go a golden brown before adding the other veg. This dinner works well with a basil garnish. For extra flavour and kick, add some chopped chilli. Once it is all ready, mix the peppercorn source in and enjoy. What a beauty! How to make the peppercorn sauce. I hope that you liked this blog and if you do try this recipe, please let me now how you got on and what it turned out like. You can leave a comment in the comments below.

Peanut butter cookies

Image
Written by McDonald, T.   |  Date 8th of November 2021 Vegans always get excited when we see a pack of biscuits that are vegan.   Sometimes though, just for fun, we like to make our own biscuits.  It is a lot easier than you might think and it will make you think about just how much sugar goes in biscuits. Notes You might find it easier to roll the dough into balls and shape them by pressing on them with a folk.  Creaming means to use the back of a large spoon to mash and mix into a paste. Makes 12 cookies Ingredients   1 cup of  peanut butter 0.25 cup of gram flour or plain flour 6 tablespoons of vegan milk 0.5 - 0.75 cup of sugar (mix brown and white) Milled flax seed 1 tps baking powder 1/4 tsp of salt Method  Step 1 Add the peanut butter and sugar, then add salt and flax seed.  Mix the flour, baking soda and milk in a separate bowl.  Once you have a smoothish paste, add it to the other bowl with the peanut butter and sugar.  Cr...

Becoming A Vegan

Image
Written by McDonald, T.   |  Date 1st of November 2021 Today is world vegan day!  When I first heard of veganism, I was in my teens.  I liked the idea, but didn't know how I would ever make the transition.  Like many others, I ate for comfort; it would give me something to look forward to.  When I got into my twenties, I started to meet many more vegans who encouraged me to try new and exciting foods.  At first, I was not keen, but did enjoy the vegan lasagna.  I tried vegan burgers and used vegetarianism as a way to move gently into veganism.  This had varying results.   I found vegans had different tactics: either trying to tempt we with food or trying to gross me out with images of slaughtered animals.  The latter just made me resent vegans and i ended up rebelling, but the food ideas would work.   After years of living as a flexitarian , someone that will eat vegan food on some days but not all,  I went on a fast...

How I Veganised Klingon Cuisine

Image
Written by McDonald, T.   |  Date 25th of October 2021 If you are a Trekkie, you should have a look at this.  I veganised a whole Klingon feast!  This has got really good food ideas that I still use today, so if you are a vegan and looking for a bit of Star Trek fun or food ideas for your Trekkie party, look no further because this is it! Abstract After watching many episodes of Star Trek i decided to investigate and try to make an authentic Klingon dinner.  However, since i am a vegan and cater for a Christian vegan audience, i had to consider appropriate constraints such as no meat, eggs or dairy and try to keep it healthy too.  With this in mind, i wondered if it was at all possible to create such a meal.  I searched the internet looking for suitable resources and found them although the sources where limited.  Despite the lack of suitable sites, the ones i did find where very helpful.  For instance, i discovered several Klingon dishe...
