Mushroom And Walnut Pâté

I used to really like pate before seeing the light and becoming a vegan.  Subsequently, I needed to find a vegan pate.  After many experiments, I think this is the one that hits the mark and satisfies my need for pate. Lovely mushroom flavour and great firmness.  As a snack, I love to have this on toast. 

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 6 cloves of garlic, minced
  • 300 g  mushrooms, sliced  
  • 2 tbsp of balsamic vinegar
  • 3 sun dried tomatoes 
  • A few olives
  • 2 tbsp of fresh basil, chopped for the end
  • 1 tsp coriander 
  • 1 tsp paprika 
  • 1 tsp nooch
  • 1 tsp salt
  • 0.5 tsp pepper  

Apparatus 

  • Frying pan 
  • Blender

Method

  1. Sauté the onions, walnuts and garlic until the onions soften.

  2. Add in the mushrooms, salt, balsamic vinegar, paprika, coriander, nooch, olives and pepper and sauté for another 5 - 8 minutes. 

  3. Let the mushrooms cool first and add the chopped basil. Pulse in a blender with the sun dried tomatoes. Scrape the sides as needed until you reach a pâté texture.

  4. Press into a container then place in the fridge for at least an hour before serving.

Results

Very tasty with toast. Really pleased with how it turned out.
