Veg, Pasta and peppercorn sauce (Vegan)

If you are feeling the cold, this will keep you warm and happy. This is a dinner that is packed with taste and that little bit of energy to keep you going in the dark winter months. It consists of pasta, mushrooms, sweet pepper, carrot, parsnip and courgette, but you could add any veg that you like. The sauce is a creamy peppercorn sauce, which you may have to make yourself if you want to keep it vegan. For best results, fry the carrot and parsnips until they start to go a golden brown before adding the other veg. This dinner works well with a basil garnish. For extra flavour and kick, add some chopped chilli. Once it is all ready, mix the peppercorn source in and enjoy. What a beauty!
