Medieval Apple Fritter

Image
Written by McDonald, T.   |  Date 28th of November 2022 With the Christmas season coming up, it is good to have a few treats in your recipe book to keep these little ones happy.  These are filling and great as a snack but best as a dessert.  They are simple and easy to make and once you have made them you can store them in the fridge for latter.  When you want them, heat them up in the oven for a few minutes.  The fritters are fun, sweet, and tasty!

Easy Vegan Chilli

Written by McDonald, T.   |  Date 21 of November 2022     If you are short of time, this is great!  Not only is it quick, but it keeps well too in the fridge, and you can even freeze it.  It is ready in 10 minutes and all you have to do is dice some onion and chop a chilli pepper.

Tofu Stir-fry With Sweet Potato Noodles

Image
Written by McDonald, T.   |  Date 14th of November 2021 This is a great meal packed with taste and full of vitamin A, B vitamins, vitamin C, vitamin K, protein and calcium.  The carrot, butternut squash and sweet potato really add a huge dose of beta-carotene that the body turns into vitamin A.  The large amount of red pepper provides vitamin C.  This dish has a strong flavour with a subtle sweetness from the sweet potato and sultanas.

Peach Cobbler

Written by McDonald, T.   |  Date 11th of November 2022 While chatting away to the usual people on social media, someone announced she was making a peach cobbler, which inspired me.  I looked around for the tastiest looking recipes and could instantly see how easily veganizable this recipe is.  Unfortunately, I couldn't find any fresh peaches anywhere, so I had to use tinned peaches in syrup.  Nonetheless, the recipe turned out splendid, and I highly recommend  this easy to make dessert that goes great with vegan ice-cream or vegan cream.  For your interest, peach cobbler was popular with English settlers in America.

Pineapple and Vegan Ham Deep Pan Pizza

Image
Written by McDonald, T.   |  Date 7th of November 2022 Some people hate the idea of pineapple on a pizza, but I love it.  I used a deep pan base, Pioneers vegan ham and Ilchester vegan cheese to make a great pizza.  Most of the work is in the waiting for the dough.

Chilli Beans

By McDonald, T.   |  Date 1st of November 2022   This is a very easy one pot.  You can make it as spicy as you like and make some adjustments without  any problems.  Quick and nutritious meal.

Baked Sweet Potato

Image
Written by McDonald, T.   |  Date 31st of October 2022   Whether you call them Jacket potatoes or baked potatoes they're always great, so how about using a sweet potato instead of a white one? Sweet potatoes are actually sweet in taste and packed full of vitamin A.  Additionally,  there're orange in colour on the inside with a brown skin on the outside.  Notably, I find they cook quicker than white potatoes and are definitely softer after cooking.

Vegan Calzone

Image
Written by McDonald, T.   |  Date 24th of October 2022 If you like pizza, this is a must try!  Calzone is basically a small folded pizza baked in the oven that resembles a Cornish pasty in looks.  However, unlike a Cornish pasty, it has a pizza filling such as pepperoni. You can choose what ever filling you like, but I will be using the Catholic vegan pepperoni filling.  While a New Yorker filling has just cheese and pepperoni, a Catholic vegan pepperoni filling has cheese, pepperoni, mushroom, onion and green pepper.  Although you can choose any filling, this one is one of my favourites.

No Tuna Pasta Bake

Image
Written by McDonald, T.   |  Date 17th of October 2022 I first learned about tuna pasta bake as a young support worker in supported living and quickly gained a liking for it.  However, since becoming a vegan, I have not found a recipe for it that takes my liking until now.  You may have had jackfruit burgers or curry as it is sometimes used as a pulled pork substitute.  Nonetheless, it works fine as a tuna substitute in this recipe.

Vegan Garlic Sauce

Written by McDonald, T.   |  Date 10th of October 2022 Garlic sauce is great with kebabs, salads and many other foods.  There is no great secret to making this strong flavoured creamy white sauce, so anyone can easier make it.  I use it as a sauce on some dishes and as a dip.  I love to dip white cabbage and sticks of carrot into it.
