Chilli Beans

This is a very easy one pot. You can make it as spicy as you like and make some adjustments without any problems. Quick and nutritious meal.
Ingredients
- Brown rice x 60g
- Chopped tomato 130g
- Kidney beans x 100g
- Black beans x 30
- Red lentils x 30g
- Carrot x 30g
- Cabbage x 70g
- Sultans x 2 tbsp
- Chilli powder x 1tsp
- Turmeric x 2 tsp
- Paprika x 1 tsp
- Coconut milk x 3 tbsp
- Nutritional yeast with B12 x 1 tsp
- Cider vinegar x 2 tbsp
Method
- Boil the black beans for about 30 minutes after soaking them in water overnight.
- Add all the ingredients except the rice to a saucepan and cook for 25 minutes on a low heat. The brown rice will usually take 25 minutes, so they should be ready together.
- Serve and add a tablespoon of plain yogurt with some chopped coriander.
