Chilli Beans

This is a very easy one pot.  You can make it as spicy as you like and make some adjustments without  any problems.  Quick and nutritious meal. 


  • Brown rice x 60g
  • Chopped tomato 130g
  • Kidney beans x 100g
  • Black beans x 30
  • Red lentils x 30g
  • Carrot x 30g
  • Cabbage x 70g
  • Sultans x 2 tbsp
  • Chilli powder x 1tsp
  • Turmeric x 2 tsp
  • Paprika x 1 tsp
  • Coconut milk  x 3 tbsp
  • Nutritional yeast with B12 x 1 tsp
  • Cider vinegar x 2 tbsp


  1. Boil the black beans for about 30 minutes after soaking them in water overnight.  
  2. Add all the ingredients except the rice to a saucepan and cook for 25 minutes on a low heat. The brown rice will usually take 25 minutes, so they should be ready together.  
  3. Serve and add a tablespoon of plain yogurt with some chopped coriander.
