Traditional English Stew

Homemade Vegan Meatless Pie

Written by McDonald, T.   |  Date 21st of August 2023       I love a good pie and this is just what I needed!  Very simple and tasty. This pie is easy and has is reminiscent of a mince meat and onion pie.  I used TVP as the mince and flavoured it with balsamic vinegar.

Minted aubergine, courgette and couscous salad

Written by McDonald, T.   |  Date 14th of August 2023  Fresh tasting dinner.  The lemon and mint combine to create a fresh taste with plenty of flavour. The aubergine and couscous soak up lots of different flavours that go great with the different texture that the onion and bell pepper provide.

Vegan Bagels – Low Calorie

Written by McDonald, T.   |  Date 7th of August 2023   Fancy a little low calorie snack or something different for breakfast?  What ever the reason, these bagels are fantastic! So easy and only 143 cals each. Makes 2 bagels Time 30 minutes Ingredients 90 g of fat free vegan yoghurt 40 g of plain flour  30 g of wholemeal flour 1 tsp baking powder A pinch of salt  Sesame seeds (optional) Method  Mix the yoghurt, flour, salt, and baking powder into a dough. Knead until smooth. Knead the dough into donut-like shapes. Top with sesame seeds (optional) Place on a baking tray with a silicon sheet or dust with flour and bake at 180C for 20-25mins. By McDonald, T.   |  Date 31st of July 2023 At first, I thought this was not going to be that good.  How wrong I was!  This is truly great in so many ways.  It tastes great and has a superb texture.  It is great in a sandwich or on a jacket potato as a topping.  Easy and cheap to make; you will not regret making this.

Chocolate Overnight Oats

I love this dish because it is tasty and goes well with a lot of things.  You have two options: use white rice or cauliflower rice.  I hope you chose the cauliflower rice option because it is so good!

Plastic Free Vegan Deodorants

Mediterranean Lemon Couscous

Written by McDonald, T.   |  Date 26th of June 2023 If you need something zingy and refreshing, this is a must.  This dish can be eaten on its own, but is usually served with veg or mock meat including tofu.  It has a sweet and powerful flavour that excites the taste buds. Easy and quick to prepare. Serves 1 Time 5- 8 minute Ingredients Couscous x 60 g Dried dates x 2 or 3 Dried apricot x 2 or 3 Sultanas x 1 tbsp Red onion x 20 g Red bell pepper x 20 g Peas x 20 g Balsamic vinegar x 1 tsp Juice of 1/2 lemon   Zest of one lemon Salt to taste Method Prepare the couscous as directed from the packet. Add the saltus and peas to the couscous. Chop the remaining dried fruit into small pieces and add to the couscous. Finely chop the remaining veg and add to the couscous.  Add the lemon juice and zest, balsamic vinegar and salt.  Mix until evenly combined.    Serve with salad or aubergine steaks.  I hope that you liked this blog and if you ...
