Vegan Spanakorizo

If you want a very simple side dish or even dinner, this is so easy and quick! I love this dish because it is tasty and goes well with a lot of things.  You have two options: use white rice or cauliflower rice.  I hope you chose the cauliflower rice option because it is so good!

Notes

  • If you want to go low carb, swap the rice for 240 g of cauliflower rice.  You can boil the cauliflower rice although I think it is better if you fry it in a little water in a frying pan.  Yes, I did say water. 
  • Some people like to add a little cumin to this dish. 
  • I used Violife Greek White Block as the feta cheese alternative.
  • Using a mechanical grater makes it all so much easier.

Note, I used a smaller grate hole than the one in the image.
 

Serves 2 - 3

Time, 20 minutes


Ingredients

  • 80 g of uncooked basmati rice (Should come out at 240 g when cooked)
  • 200 g of finely chopped spinach
  • 6 spring onions
  • Garlic x 4 cloves, minced
  • Fresh mint leaves x 30 g
  • 50 g of vegan feta cheese alternative
  • The juice and zest of 1 lemon
  • Red wine vinegar x 3 tbsp
  • 1/2 a lemon sliced

Method 

If using rice

  1. Boil the rice.  Once boiling, add the slices of lemon and spinach then reduce to a simmer.
  2. Drain and tip into a bowl. 
  3. Add the chopped mint, garlic, lemon zest, red wine vinegar, spring onion and diced vegan feta cheese alternative.  Stir once or twice and immediately tip on to a plate.
  4. Pour the lemon juice over the rice  

If using cauliflower rice

  1. Make the cauliflower rice by grating the cauliflower with the grater with the smaller holes.  
  2. Add the chopped spinach and spring onions to a frying pan with a tsp of vegetable oil and start to fry.   
  3. Add the cauliflower rice and fry for about 6 – 8 minute on a medium heat while stirring.
  4. Add the chopped mint, garlic, lemon zest, red wine vinegar, spring onion and diced vegan feta cheese alternative.  Stir once or twice and immediately tip on to a plate.
  5. Add the slices of lemon and pour the lemon juice over the cauliflower rice.
  6. Pour the lemon juice over the rice 


Results 

Has a light fresh taste due to the lemon juice.  I used the cauliflower rice option and was not disappointed. Brilliant!
