Vegan Spanakorizo

I love this dish because it is tasty and goes well with a lot of things.  You have two options: use white rice or cauliflower rice.  I hope you chose the cauliflower rice option because it is so good!

Mediterranean Lemon Couscous

Written by McDonald, T.   |  Date 26th of June 2023 If you need something zingy and refreshing, this is a must.  This dish can be eaten on its own, but is usually served with veg or mock meat including tofu.  It has a sweet and powerful flavour that excites the taste buds. Easy and quick to prepare. Serves 1 Time 5- 8 minute Ingredients Couscous x 60 g Dried dates x 2 or 3 Dried apricot x 2 or 3 Sultanas x 1 tbsp Red onion x 20 g Red bell pepper x 20 g Peas x 20 g Balsamic vinegar x 1 tsp Juice of 1/2 lemon   Zest of one lemon Salt to taste Method Prepare the couscous as directed from the packet. Add the saltus and peas to the couscous. Chop the remaining dried fruit into small pieces and add to the couscous. Finely chop the remaining veg and add to the couscous.  Add the lemon juice and zest, balsamic vinegar and salt.  Mix until evenly combined.    Serve with salad or aubergine steaks.  I hope that you liked this blog and if you do try this recipe, please let me know how you got on

Vegan Lahmacun

It is vegan much like a pizza, but on flat bread.  Unlike pizza, which has many variations of toppings, lahmacun has one type of topping, which is like bolognaise sauce. Although some people use the oven method, I think that makes it too much like a pizza, so I prefer to stovetop method to keep it a little more different. Notes  You can wrap it up like a burrito or cut it into slices like a pizza. For that little extra, add a couple of teaspoons of vegan red pesto to the sauce.   Makes 1 lahmacun Time 15 – 20 minutes   Ingredients  For base Strong bread flour x 80 g Water x 40 ml Salt x a pinch For sauce Tomato x 1 medium Tomato purée x 1 tbsp Garlic x 1 clove crushed Lemon juice from 1/2 a lemon Cumin powder x a pinch TVP x 20 g Chilli pepper x 1/2 For extra topping A few slices of onion A few pieces of chopped tomatoes Small amount of vegan cheese A chilli pepper Fresh herbs Method Step 1 – Make the dough for the flatb

With this in mind, salad seems like a good idea.  However, this is a salad with a difference.  The sweet taste of the apple combined with the spicy sriracha and bang bang sauce is something else! 

Cauliflower Pizzaiola

Written by McDonald, T.   |  Date 29th of May 2023  I was surprised at how quick and easy this dinner was to make.   Pizzaiola or Carne Pizzaiola was originally an Italian meat dish.  However, the meat has been replaced with cauliflower and the cheese swapped for vegan alternatives to make it vegan. This is a wonderful dish that is high in vitamin C.

Vegan Pineapple Upside-Down Cake

Written by McDonald, T.   |  Date 22 of May 2023     I loved this cake as a boy, but never got to have it much.  How things have changed!  This cake has a pineapple topping often with cherries.  I love the different textures and sweet tastes this cake has to offer. It is great warm or cold.  You can have it with cream, ice-cream, custard or just on its own.  Ingredients For the topping 5 – 6 pineapple rings, fresh is better. 50 g softened vegan butter 50 g light soft brown sugar 7 glacé cherries For the cake Wet Ingredients 2/3 cup plain vegan yogurt 1/3 cup of vegan milk 1/3 cup rapeseed oil (any vegetable oil will do)  1/3 cup of pineapple juice 1 tbsp of white vinegar 1 tsp vanilla extract Dry Ingredients: 1 and 1/2 cups of self rasing flour 3/4 cup sugar 1 and 3/4 teaspoon baking powder 1/4 teaspoon bicarbonate of soda 1/4 teaspoon salt  Method Mash the light brown sugar and vegan butter together into a paste. Spread this over the bottom and up the sides of the cake tin.

Vegan Tamagoyaki

This Chinese omelette is sweet, different, and tasty.   Although, the crackD egg replacement struggles with this dish, it is still good and better than nothing.

What to use instead of meat In these examples for the no-chicken shish kebab, I have used tofu in one and Squeaky bean in the other. Chilli Sauce Like the Kebab Van

Written by McDonald, T.   |  Date 10th of April 2023  If you are going to have a vegan doner kebab, you might as well make some chilli sauce to go with it.  You can, of course, have chilli sauce with anything that you like!  Personally, I think it goes well with most mock meats.   This spicy tomato sauce is easy to make, and I will show you the version you don't need to cook.

Jacob's Red Stew

The story comes from the Old Testament Book of Genesis.  Jacob and Esau were brothers, the sons of Isaac and Rebecca.  According to the story in Genesis 25, Esau is so hungry that he trades his birth right for a bowl of stew!  While the beans and lentils fill the stew with textures and nutrition, the flavours come from the seasoning and spices.

Fried Aubergine And Vegetable Rice With Yoghurt Sauce

Written by McDonald, T.   |  Date 20th of March 2023 Looking for something tasty that doesn't make you feel bloated?  I loved this dish because it was so tasty and light on my stomach.  Interestingly enough, I got this recipe from a chief in an eating disorder clinic and made a few alterations to it to reduce the calories and make it vegan.  Nonetheless, it still has a lot of flavour and packs some great nutrition. Notes Follow the link for how to make the Greek style yoghurt sauce . You can add a bit of pale cream sherry to the aubergine while it is frying. Serves 1 Time – 20 minutes Ingredients  Aubergine x 2 thick slices Rice x 1/4 cup (dried) Mixed veg 100 g Soya sauce x 1 tbsp Balsamic vinegar x tbsp Yoghurt sauce x 1 serving Salt x a pinch Apparatus Medium sized frying pan with a lid.  Small saucepan. Wooden spatula. Method Start boiling the brown rice with the mixed veg in the same saucepan.  Pour the balsamic vinegar and soya sauce into the frying pan. (on oil). Turn up

A Vegan's Irish Stew

Yay!  With this in mind, why not have an Irish stew?  You can make a big pot of it and treat your party guests to a hearty meal.  After all that celebrating, your guests are bound to be hungry, right? This is such an easy and delightful meal that is a huge winner for everyone.  In addition, you can make some soda bread to go with it.  Moreover, this is a very easy meal to veganise.  You either just leave out the meat or use tofu or a meat substitute.

Stewing Sauce

Written by McDonald, T.   |  Date 27th of February 2023 I use this sauce to stew mushrooms, peppers, and onions.   However, it can be used in a stir-fry or as gravy.  This is a mild sauce with a little sweetness to it.  I live the beautiful dark colour it has and the way it can be spiced up if you need. 

Plant Chef Beet Burger

Written by McDonald, T.   |  Date 20th of February 2023 The Plant Chef Beet Burger was actually very good!  It didn't seem to taste much of beetroot though; nonetheless, it had a great texture and was chewable like meat.  Plant Chef is a home brand from Tesco, a supermarket in the UK.  The burger is vegan, but unfortunately is packaged in plastic.
