Vegan Sausage Casserole

This is a very traditional dish with a modern twist and it is so easy to prepare.  Sausages are a much loved favourite in the UK, so obviously it is of high priority to veganise.  Since we have a huge number of vegan sausages to choose from, this is an easy task.  Fantasticality comforting and great with new potatoes or mash.


Notes

  • I used Plant Chef Sausages from Tesco, but you can use any vegan sausages you like. 




Serves 2

Time, 40 minutes


 


Ingredients

  • 4 Vegan sausages 
  • 6 Mushrooms
  • 1/2 a carrot
  • 1/2 a leek 
  • 1/2 Onion, thinly sliced
  • 2 garlic cloves, crushed 
  • 200 g of Chopped tomatoes
  • 1/2 cup of peas
  • 200 ml of Vegetable stock
  • 2 tbsp tomato purée
  • 1 tsp dark brown muscovado sugar
  • 1 tsp dried mixed herbs
  • 1 Bay leave
  • 1 tsp of Paprika
  • 1/2 tsp of Salt
  • 1 tsp of White pepper

Method 

  1. Fry the sausages in a frying pan until they start to turn brown, then remove and keep for later. 

  2. Fry the onions and garlic until the onions start to brown.  Add to a suitable sized casserole dish.

  3. Add all the other ingredients to the casserole dish and add the sausages.  Put the lid on and place in a preheated oven at 150C for 40 minutes.  Take out and stir before putting back in and turn the temp down to 120C.  Leave in the oven for another 20-30 minutes.

  4. Remove the bay leaf and serve with potato either boiled, new or mashed.

Results 

I really liked this.  I decided to have it with more steamed kale and potatoes.
