Cauliflower Pizzaiola

Image
Written by McDonald, T.   |  Date 29th of May 2023  I was surprised at how quick and easy this dinner was to make.   Pizzaiola or Carne Pizzaiola was originally an Italian meat dish.  However, the meat has been replaced with cauliflower and the cheese swapped for vegan alternatives to make it vegan. This is a wonderful dish that is high in vitamin C.

Vegan Pineapple Upside-Down Cake

Written by McDonald, T.   |  Date 22 of May 2023     I loved this cake as a boy, but never got to have it much.  How things have changed!  This cake has a pineapple topping often with cherries.  I love the different textures and sweet tastes this cake has to offer. It is great warm or cold.  You can have it with cream, ice-cream, custard or just on its own.  Ingredients For the topping 5 – 6 pineapple rings, fresh is better. 50 g softened vegan butter 50 g light soft brown sugar 7 glacé cherries For the cake Wet Ingredients 2/3 cup plain vegan yogurt 1/3 cup of vegan milk 1/3 cup rapeseed oil (any vegetable oil will do)  1/3 cup of pineapple juice 1 tbsp of white vinegar 1 tsp vanilla extract Dry Ingredients: 1 and 1/2 cups of self rasing flour 3/4 cup sugar 1 and 3/4 teaspoon baking powder 1/4 teaspoon bicarbonate of soda 1/4 teaspoon salt  Method Mash the light brown sugar and vegan butter together into a paste. Vegan Tamagoyaki

Written by McDonald, T.   |  Date 15th of May 2023 Omelettes are one of those things I miss. However, thanks to crackD we have an easy way to make them. This Chinese omelette is sweet, different, and tasty.   Although, the crackD egg replacement struggles with this dish, it is still good and better than nothing.

Vegan Pepperoni Pizza - Thin base

Written by McDonald, T.   |  Date 8th of May 2023 Up until now, I have never been a great fan of thin pizza bases.  However, this one is just so easy and tastes great! It needs few ingredients and no special expertise.

Jackfruit Linguine

Written by McDonald, T.   |  Date 1st of May 2023 Another quick and easy meal.  The original recipe used crab, which I replaced with jackfruit.  The dish has strong flavours from the lemon and tomato.

Stewed Mushrooms, peppers and Onion

Image
Written by McDonald, T.   |  Date 24th of April 2023  A very easy meal with little effort in a beautiful rich dark gravy.  This is one of my favourites that I like to have with rice.  I like it because it is so easy to make and so quick, yet it has a great flavour and goes so well with most rice dishes.  I find pineapple fried rice to be a great companion to this tasty dish.

How To Make Kebab Van Dinner

Image
Written by McDonald, T.   |  Date 17th of April 2023 Do you ever start to miss a take-a-way?  If you do, you are not alone.  Many vegans have expressed a desire to have more choice and take-a-way is no exception.   For this reason, I have written this blog to show you how you can make a classic take-a-way that will leave you speechless!  I will cover both doner and shish kebabs. What to use instead of meat In these examples for the no-chicken shish kebab, I have used tofu in one and Squeaky bean in the other. I cut the tofu into chunks and added it to the skewers; however, the squeaky bean meat substitute did not need much time to heat, so a heated it separately in the same roasting tray.  Squeaky bean meat substitute with red pepper and mushroom kebabs and chips. Doner Style Kebab Yes, doner style kebab meat is available in the UK!  The product is from Oumph, made from peas and is brilliant!  Oumph doner style mock meat cooks in minutes ...

Chilli Sauce Like the Kebab Van

Image
Written by McDonald, T.   |  Date 10th of April 2023  If you are going to have a vegan doner kebab, you might as well make some chilli sauce to go with it.  You can, of course, have chilli sauce with anything that you like!  Personally, I think it goes well with most mock meats.   This spicy tomato sauce is easy to make, and I will show you the version you don't need to cook.

Vegan Sausage Casserole

Image
Written by McDonald, T.   |  Date 3rd of April 2023 This is a very traditional dish with a modern twist and it is so easy to prepare.  Sausages are a much loved favourite in the UK, so obviously it is of high priority to veganise.  Since we have a huge number of vegan sausages to choose from, this is an easy task.  Fantasticality comforting and great with new potatoes or mash.

Jacob's Red Stew

Image
Written by McDonald, T.   |  Date 27th of March 2023        Who is Jacob?  Why is his stew so important? The story comes from the Old Testament Book of Genesis.  Jacob and Esau were brothers, the sons of Isaac and Rebecca.  According to the story in Genesis 25, Esau is so hungry that he trades his birth right for a bowl of stew!  While the beans and lentils fill the stew with textures and nutrition, the flavours come from the seasoning and spices.
