Vegan Egg, Sausage, and Bacon Pie

Written by McDonald, T.   |  Date 25th of September 2023   This is one of those recipes I used to make with my Nan as a boy.  It was always a favourite of mine and would only be made on special occasions.  This pie has a great combination of flavours without missing out on the oily textures associated with this classic 70s pie. Notes I used crackD egg alternative for the egg substitute. I used this isn't bacon lardons. I used naked taste vegan sausages. I used ready rolled short crust pastry for the store.  I found using a baking dish with a removable bottom helped a lot.  If the pastry domes when you blind bake it, prod it with a folk.    Makes a pie with dimensions of  Time, about 30 to 35 minutes. Ingredients Egg replacement x 150 g Vegan bacon lardons x 100 g Vegan sausages x 2 Red onion, finely chopped x 1/4  Salt x pinch Vegan cheese, grated x 30 g Short crust pastry x 200 g. Chunky Apple Sauce

Written by McDonald, T.   |  Date 18th of September 2023 I don't know about you, but I love a bit of apple sauce with my Sunday roast.   With this in mind, why not make your own apple sauce?  It is quick and easy to make and after all, this is apple season.  It takes less than half an hour and only have five ingredients. 

Vegan Pizza Base Recipe

Written by McDonald, T.   |  Date 11th of September 2023 Although I am not one to advocate for junk food, sometimes people like to have something different.  Pizza is by no means healthy even if it is vegan; nonetheless, it is fun to eat.  You can, of course, buy vegan pizzas these days, but it is never the same as making your own.  This is a great recipe for making a pizza base leaving only the toppings to be decided by you.   You have two options: Deep pan pizza base (Is like Italian flat bread and uses yeast) Thin and crispy pizza base (no yeast)

Orchard Apple Pie

Written by McDonald, T.   |  Date 4th of September 2023 I love a great apple pie!  This is easy and tasty.  So simple to make and so easy to eat.  Admittedly, I used the pre made pastry from a superstore because it is vegan relatively cheap and very convenient for me.  The apples come from a local orchard, which I stewed with sugar and spices to bring out the flavour.  I used dark brown sugar, which gave it a distinct flavour and its dark colour.

Traditional English Stew

Written by McDonald, T.   |  Date 28th of August 2023 If you want a simple traditional, this is an excellent vegan version of this family favourite.  I never had this enough as a boy and found it made winter so much more bearable.  There is nothing flash about this stew and it just has a few ingredients.

Homemade Vegan Meatless Pie

Written by McDonald, T.   |  Date 21st of August 2023       I love a good pie and this is just what I needed!  Very simple and tasty. This pie is easy and has is reminiscent of a mince meat and onion pie.  I used TVP as the mince and flavoured it with balsamic vinegar.

Minted aubergine, courgette and couscous salad

Written by McDonald, T.   |  Date 14th of August 2023  Fresh tasting dinner.  The lemon and mint combine to create a fresh taste with plenty of flavour. The aubergine and couscous soak up lots of different flavours that go great with the different texture that the onion and bell pepper provide.

Vegan Bagels – Low Calorie

Written by McDonald, T.   |  Date 7th of August 2023   Fancy a little low calorie snack or something different for breakfast?  What ever the reason, these bagels are fantastic! So easy and only 143 cals each. Makes 2 bagels Time 30 minutes Ingredients 90 g of fat free vegan yoghurt 40 g of plain flour  30 g of wholemeal flour 1 tsp baking powder A pinch of salt  Sesame seeds (optional) Method  Mix the yoghurt, flour, salt, and baking powder into a dough. Knead until smooth. Knead the dough into donut-like shapes. Top with sesame seeds (optional) Place on a baking tray with a silicon sheet or dust with flour and bake at 180C for 20-25mins. Vegan Tuna Mayo: Chickpea Version

By McDonald, T.   |  Date 31st of July 2023 At first, I thought this was not going to be that good.  How wrong I was!  This is truly great in so many ways.  It tastes great and has a superb texture.  It is great in a sandwich or on a jacket potato as a topping.  Easy and cheap to make; you will not regret making this.

Spiced Quinoa Stuffed Peppers
