Pink Lenfu

Pink Lenfu is tofu made with red lentils. It is incredibly easy to make and so worth it! It is made in 30 mins although you can't really use it for 2 hours, and it is best if you leave it overnight. You can marinade it like tofu, fry it like tofu, use it like tofu.
Notes
- Yes, you can add all sorts of extras. For instance, I sometimes add:
- White pepper
- Chilli powder
- Balsamic vinegar
- or lemon juice
- Don't let it stick to the bottom of the saucepan when stirring. You really got to keep stirring constantly, but don't worry because it quickly thickens and will be ready to transfer to the glass dish in a few minutes.
- Once it is ready to move from the saucepan to the glass dish, it will start to set pretty quickly, so don't hang about!
- You use the same process to make lentil pasta. The difference is you transfer to a floured board and roll it out or shape it into what you want. Obviously, use gluten free flour.
- No need to grease the dish because it will come straight out with no problems.
Ingredients
- Red Lentils
- Salt
- Water
Apparatus
- Medium sized mixing bowl
- Balloon whisk
- Medium sized saucepan
- Spatula
- Hand blender
- Glass dish (W 15 cm x L 20 cm x H 7 cm is perfect size. It used not have less volume or you won't get it all in!)
Method
- In a medium sized bowl, soak the lentils in the hot water for 20 mins.
- Blind to a smooth paste while still in the bowl with the water with a hand blender.
- In a saucepan on a high heat, keep stirring with a whisk until it starts to bubble. Immediately turn the heat down to medium and keep stirring until you get a really thick paste. You should be able to stand the whisk up in the middle of the saucepan with ease.
- Move the mixture to a glass dish. Cover with a tea-towel and allow to cool.
- Once cooled, move to fridge and leave for at least 2 hours, or better still overnight.
