Banana, Lemon, and Coconut Bread

Yes, this is another variation on banana bread. The oats and the chia seeds add a lot of nutrition to this bread as well as flavours and textures, making this fun bread with perks. Chia seeds are great sauces of calcium, iron, fibre, and magnesium. While dietary fibre helps us to fill full, magnesium is thought to help reduce anxiety and depression. In keeping with alleviating the symptoms of depression, lemon juice is also said to help.
Notes
- Make sure you use really ripe bananas.
- Most recipes will tell you to mash with a folk; however, I use a masher, it's much quicker.
- The vinegar and the lemon juice will react with the bicarbonate of soda to produce gas. This makes the bread rise.
- Yes, this bread/cake does work better with both bicarbonate of soda and baking powder due to the heavy dough because of the whole rolled oats.
Ingredients
- 3–4 very ripe bananas, mashed (about 400 g – 500 g peeled)
- 1 tbsp of caster sugar or stevia
- 130g of rolled oats
- 170g of strong wholemeal flour
- 1.5 tsp of chia seeds
- 50g sultanas soaked in lemon juice
- 50 g of coconut flakes or desiccated coconut
- 1 tsp ground mixed spice
- 1 tsp ground sweet cinnamon
- 1.5 tsp baking powder
- 1 tsp of bicarbonate of soda
- 1 tbsp of vegetable oil
- 1 tbsp of distilled vinegar
- 120 ml of water
Apparatus
- H 6 cm x W 11 cm x D 21 cm loaf tin
- Large mixing bowl
- Wooden spoon
- Measuring spoons
- Spatula
Method
- Peel the bananas, break them up into small pieces and put in a bowl. Mash the bananas.
- Weigh
out both the flour and the oats in a large mixing bowl. Add the baking powder, bicarbonate of soda,
sugar, and spices. Mix completely. Add the oil.
- Add the water and combine into a shaggy dough.
- Add the soaked sultanas.
- Add the mashed banana and mix again until you are satisfied the mixture is even.
- Allow to rest in the fridge for 1 hour to allow the flavours to combine.
- Preheat the oven to 180 °C and grease the tin.
- Place on the lower middle shelf of the oven and bake for about 50 – 55 mins.
- When ready, test with a cake tester. If the cake tester is clean, leave to cool for about 10 minutes before turning out onto a cooling rack. Leave to cool completely for about 40 minutes.
Break banana into small pieces. |

Mix in the raisins and mashed banana. |
Pour into a greased small loaf tin. |
Results
This is a really nice bread, but I might use desiccated coconut next time instead of coconut flakes.
