Apple Turnovers

Who can resist the light puff pastry and the sweet apple filling?  These are most definitely a great little treat for this time of year.  You could have these ready in no time at all!

Notes

  • I used pre-made puff pastry from the shop and yes it was vegan. 
  • You can make either traditional triangle shaped ones or rectangle ones or even both. 
  • Don't use oil to make the edges stick because it never works; use vegan milk.
     


 


Makes 4 turnovers

Time 40 minutes


 

Ingredients

  • Apples x 200 g
  • Sultanas x 30 g
  • Sugar x 3 tbsp + some to sprinkle on top
  • Sweet ground cinnamon x 1/2 tsp
  • Water x 10 ml
  • Vegan milk for glaze x a splash
  • Puff Pastry x 320 g

 


Method

Step 1 – make the apple filling

  1. Peel and core the apples then cut into big chunks and place in the pot with 10-20 ml of water, see figure 1.  You don't want the compote to be too watery or runny.
  2. Add the cinnamon and the sugar.
  3. Cover and heat with the lid on for 10–15 minutes until the apple begins to breakdown.  Be careful not to over stew the apples because you want to keep it chunky; you don't want a paste like with apple sauce, see figure 2.
  4. Take off the heat and allow it to cool.

Step 2 – make the apple turnovers

  1. Take the puff pastry out of the fridge and leave on one side in the packaging for at least 30 minutes.  Otherwise, it will break up when you try to unroll it.
  2. Unroll the puff pastry carefully.
  3. I measured out two 5 × 6 inch rectangles and two 5 × 5 inch squares, see figure 3.
  4. Spoon the compote mixture onto one side of the rectangles leaving about 1 cm space from the edge.  Brush this edge with a little vegan milk, see figure 4.
  5. Fold the pastry over and press together with a folk, see figure 5.
  6. Spoon some compote mixture onto one side of the squares, so it is down the diagonal, see figure 6.
  7. Brush a little vegan milk around the edge and fold over to make a triangle this time and use the handle end to gently press together the edges, see figure 7. 
  8. Poke a few steam holes in the tops with a folk, brush with vegan milk and sprinkle generously with sugar. 
  9. Place in a preheated oven at 180C for 15 – 20 minutes

Figure 3, Make 5 × 6 rectangle shapes.

Figure 4, fill on one side of the pastry rectangle.

Figure 5, press edges together with a folk.

Figure 6, spoon the compote down one half of the square.

Figure 7, Make a triangle shape and press the edges down gently.

Figure 8, All ready for the oven.

Results

Really light puff pastry with a delicious apple filling.
