Tofu Slices Stewed In Onion Gravy

One simple dinner I used to miss was stewed beef slices in onion gravy.  Well, I don't have to miss this dinner any more and neither do you.  This is so simple and easy you will be able to have it many times a week if you want. I have tried with extra firm and just firm tofu and the extra firm is much easier to slice with a mandolin.


Time 1 hr and 30 minutes, 30 minutes cook time.

Serves 1

Ingredients

  • Tofu, extra firm x 100 g
  • Onion x 1/2 a small
  • Gravy x 1-2 tsps or whatever makes 250 ml
  • Yeast extract x 2 tsp
  • Cider vinegar x 2 tbsp

Apparatus

  • Mandolin
  • A dish for the marinade

 


Method

  1. Slice the tofu using the mandolin. Put the slices in a suitable container with a lid. 
  2. Mix the yeast extract and the cider vinegar with a little water. You need enough to cover the tofu in the container. Pour the marinade over the tofu, put the lid on and leave in the fridge for at least an hour.
  3. Add the sliced onion to a saucepan with a little oil and heat until the onion softens and because translucent. 
  4. Add the tofu and marinade to the saucepan.
  5. Make the gravy and pour over the tofu and onions.  Stew for 20 – 30 minutes on a medium heat. 
  6. Serve with potato and veg.
