Quinoa and Bulgar Wheat

Quinoa is high in protein and Bulgar wheat is a great source of roughage/fibre, so if you are looking for a dish with protein, but is still fibre rich, this is a great meal to have. I like to eat this with salad, but you can have it with veg or just have a big bowl of it by its self.
Serves 1
Time 30 minutes
Ingredients
- Quinoa x 40 g
- Bulgar Wheat x 40 g
- Spring onions x 3
- Red bell pepper x 1
- Lemon juice and zest from 1/2 a lemon
- Fresh flat leaf parsley x 15 grams
Method
- Wash and drain the quinoa and Bulgar wheat. Add the quinoa and Bulgar wheat to a saucepan of boiling water, and simmer for about 20 – 25 minutes. (Check your packet for instructions.)
- Dice the spring onions and bell pepper, so the pieces are quite small. Add to a small mixing bowl.
- Drain the quinoa and Bulgar wheat and mix in to the bowl with the diced onions and bell pepper.
- Chop the parsley and mix it in with the lemon zest and juice.
