Quinoa and Bulgar Wheat

Quinoa is high in protein and Bulgar wheat is a great source of roughage/fibre, so if you are looking for a dish with protein, but is still fibre rich, this is a great meal to have.  I like to eat this with salad, but you can have it with veg or just have a big bowl of it by its self.  

Serves 1

Time 30 minutes

Ingredients

  • Quinoa x 40 g
  • Bulgar Wheat x 40 g
  • Spring onions x 3 
  • Red bell pepper x 1
  • Lemon juice and zest from 1/2 a lemon
  • Fresh flat leaf parsley x 15 grams

 

Method

  1. Wash and drain the quinoa and Bulgar wheat. Add the quinoa and Bulgar wheat to a saucepan of boiling water, and simmer for about 20 – 25 minutes. (Check your packet for instructions.)
  2. Dice the spring onions and bell pepper, so the pieces are quite small. Add to a small mixing bowl.
  3. Drain the quinoa and Bulgar wheat and mix in to the bowl with the diced onions and bell pepper. 
  4. Chop the parsley and mix it in with the lemon zest and juice.
