Ratatouille

I very simple, but delightful dish that makes a fun mid-week addition to your repertoire. Beautiful chunky vegetables in a tangy tomato sauce.
Severs 2Time, 25 minutes or less
Ingredients
- Aubergine x 1
- Courgette x 1
- Bell pepper x 1
- Onion x 1
- Tin of chopped tomatoes x 400 g
- Lemon juice x 1/2
- Garlic x 4 cloves
- Fresh basil x 30 g bunch
- Salt and pepper to taste
Method
- Dice the onion and fry in olive oil with the chopped garlic until the onion starts to soften.
- Dice the rest of the vegetables and lightly fry them for a few minutes.
- Add the lemon juice, chopped tomatoes, salt, and pepper.
- Stir and simmer for 15 minutes.
- Add the fresh basil and serve.
