I very simple, but delightful dish that makes a fun mid-week addition to your repertoire.  Beautiful chunky vegetables in a tangy tomato sauce.

Severs 2

Time, 25 minutes or less


  • Aubergine x 1
  • Courgette x 1
  • Bell pepper x 1
  • Onion x 1
  • Tin of chopped tomatoes x 400 g
  • Lemon juice x 1/2
  • Garlic x 4 cloves
  • Fresh basil x 30 g bunch
  • Salt and pepper to taste


  1. Dice the onion and fry in olive oil with the chopped garlic until the onion starts to soften.
  2.  Dice the rest of the vegetables and lightly fry them for a few minutes. 
  3. Add the lemon juice, chopped tomatoes, salt, and pepper. 
  4. Stir and simmer for 15 minutes. 
  5. Add the fresh basil and serve.
