Gochujang Fried Rice

This is a dish you just must try.  It's so tasty and filling.  The Korean spices gives this a fantastic flavour and the veg and tofu add to the texture and increase the variety of flavours. 

Notes

  • I used frozen mixed veg and sweetcorn.
  • I used brown basmati rice. 
  • Brown rice is better for frying than white.

Ingredients

  • Brown rice x 50 g
  • Extra firm tofu x 110 g
  • TVP mince x 2 tbsp
  • Onion x 1 small
  • Mixed veg x 120 g
  • Sweetcorn x 60 g
  • Gochujang paste x 2 tsp
  • Soy sauce x 2 tbsp
  • Cider vinegar x 2 tbsp
  • Water x 100 ml

Method

  1. Cook the brown rice as directed by packaging. 
  2. Dice the tofu and onion then lightly fry in a little oil until the onion starts to soften. 
  3. Prepare the tvp mince as directed by the packet and add to the frying pan. Fry for about 1 minute.
  4. Add the prepared rice, the sweetcorn and mixed veg.
  5. Add the gochujang paste, soy sauce, cider vinegar and water.  Mix well and lower the heat. Cover and leave for 5 minutes ensuring to stir every minute so as to not burn.
