Easy No Knead Bread

No need for kneading makes it so easy! All you have to do is mix all the ingredients together and leave it overnight before baking it the next day. Adding in some folding will improve your bread no end while the salt and sugar help to preserve it for longer although it's not likely to be around long if you know what I mean.

Waste

Short term waste:

  • Zero
 Long term waste:
  • Flour packaging
  • Yeast packaging
  • Sugar packaging 
  • Salt container 
Mix the dry ingredients together.
Sticky dough.
After 12 hours, put into a big pot.

Notes

  • Hydration is at 80%, but you can go higher.

Baker's notes

  • Flour 100% (500 g)
  • Water 86% (430 g)
  • Yeast 1.4% (7 g) dry  [Fresh is 4% (20) g] 
  • Salt 1.8% (9 g)

Method 

  1. Mix all the ingredients in a large mixing bowl. 
  2. Cover the bowl and leave to rise for at least 12 hours overnight in the kitchen.  
  3. In the morning, you will see it has risen. Fold the dough gently 4 or 5 times, recover and leave it for 30 to 40 minutes.
  4. Fold it again and cover.
  5. Preheat the oven for about 15 -20 minutes, or until it reaches 230 °C with the pot in the oven.   Make sure the oven is very hot before baking the bread. 
  6. Grease the pot or sprinkle the bottom with flour.  Add the dough to the pot.
  7. Put the pot with the lid on in a preheated oven for 30 minutes.
  8. Remove the lid and continue to bake for another 12 - 15 minutes depending on how crusty you want it. 

Results

This bread has turned out so good!  It is soft with a light crispy crust as a result of the higher hydration.
