Strawberry Dessert Cake

This is a simple little cake made without oil for Pentecost. However, it is fine to have any time of the year.  It has a great texture and wonderful strawberry flavour.  Perfect for a little treat.

Makes one small cake.

Ingredients:  

  • 1 flax egg
  • 2 tsp of stevia
  • 100 g Strawberry vegan yoghurt
  • 100 g flour 
  • 50 ml of soya milk
  • 1 tsp baking powder  

 

Method

  1. Pre-heat oven to 180 °C (356 °F)
  2. Mix all the dry ingredients together with a balloon whisk in a small bowl. 
  3. Mix all the wet ingredients together in a separate bowl.
  4. Bake for 23–25 mins or until a toothpick inserted into the centre comes out clean

Rum And Raisin Loaf

The rum adds flavour to the raisins while the raisins add sweetness to the run.  This beautiful bread as a great bready texture, yet is fruity and warming to the soul.
