Quinoa and Bulgar Wheat Salad

A fresh zingy salad, which is great at this time of the year.  Easy to make and full of great nutrition this dish has lots of flavour from the lemon juice, onion and fresh mint. Plenty of fibre and vitamin C.


  • You will need an unwaxed lemon


  • 40 g bulgar wheat 
  • 40 g of quinoa
  • 190 g of broad beans
  • Juice and zest of one lemon
  • 60 g of carrots, grated
  • 100 g of red pepper, finely diced
  • 100 g of cucumber diced
  • 15 g of chopped coriander
  • 15 g of chopped mint
  • 1 spring onion finely chopped


  1. Cook the bulgar wheat and quinoa according to the instruction on the packet. Usually about 20 minutes.
  2. Four minutes before the end of the cooking time add the broad beans.
  3. Drain the bulgar, quinoa, and broad beans.
  4. Add the diced pepper, cucumber, onion, lemon juice and lemon zest.
  5. Chop the herbs and give it a good mix.
