Vegan Brownies: Low Calorie

These little tasty treats are just 43 calories per square.  I have wanted to try these for a long time and I'm glad to say that they were worth the wait.  They have a great texture and a lovely chocolaty flavour.  Ready in 30 minutes.


Notes

  • You can blend the oats into a flour if you like, but I like the more coarse texture.

Ingredients

  • 150 g of vegan Greek-Style yogurt 
  • 1/4 cup almond milk 
  • 1/4 cup cocoa powder 
  • 1/4 cup rolled oats 
  • 1/4 of self-raising flour
  • 1 tbsp stevia 
  • 1 tsp of dark brown sugar
  • 3 tbsp of apple sauce
  • 1 tsp of baking powder 

Apparatus

  • Mixing bowl
  • Square baking tin 
  • Balloon whisk 
  • Wooden spoon
  • Spatula

Method

  1. Preheat the oven to 200 °C. 
  2. Grease a square baking tin. 
  3. In a mixing bowl, add the flour, oats, stevia, baking powder and cocoa powder.  Use the balloon whisk to combine.
  4. Add the other ingredients and combine into a dough.
  5. Leave in the fridge to rest for 15 – 20 minutes.
  6. Pour into the prepared dish and bake for 15 minutes.  Use the spatula to scrape out the last bits from the bowl.  Use the spatula again to spread the mixture evenly around the tin.
  7. Allow to cool completely before cutting into 9 large squares.
