Baked Onion

This dish goes well with anything such as potato, rice, quinoa, buckwheat, or couscous.  The sauce is as easy to make as it is versatile.  The prunes give it a sweetness while the vegan feta and onion blend their flavours together magnificently. 

Notes

  • Pitted prunes make life easier.

 

Serves 1

Time, 30 – 40 minutes

Ingredients

  • 1 large red onion
  • 10 g of vegan feta alternative
  • 50 g of pitted prunes 
  • 1 garlic clove
  • 1/4 tsp of ground ginger
  • 100 ml of vegetable stock


Method

  1. Steam the onion until soft enough to push some of the middle out, about 15 minutes.

  2. While the onion is steaming, make the sauce.  Put the prunes in a small processor with the cider vinegar, garlic, ginger and stock.  Blend on high speed until liquified.

  3. When the onion is ready, let it cool for a bit on a chopping board.  Poke out the middle and stuff in the vegan feta.

  4. Bake in the oven in a dish with a lid in the prune sauce for 15 to 20 minutes
