Lime And Soya Sauce Tofu

Vegans never miss out on anything. This is a great meal with its dark, thick, sweet sticky sauce. The flavours are strong and pleasing in the lime and soya sauce. In addition, the chunky vegetables give you something to bite into. The dish has a comforting texture and is great with plain rice. Just imagine taking a bite!
Notes
- I used extra firm tofu because it has more calcium and protein.
- I used red bell pepper because it has more vitamin C than the other colour, but green would have looked better.
Serves 2

Ingredients
- 50-60 g Tofu
- 1/2 Red onion
- 1/2 Red or green bell pepper
- 1/2 Carrot
- 2 mushrooms
- 2 Cloves of garlic
- 1 tsp of ground ginger
- 1 tsp of ground coriander
- Lime zest
- Lime juice
- 50 ml Red wine vinegar
- 20 m/ Dark soya sauce
- 1 tbsp Sugar
- 1 tsp of cornstarch and enough water to make a thick paste
- Sesame seeds for garnish
- Suitable marinade enough to cover the tofu
Method
Step 1 – marinade the tofu.
Press the tofu, but not too much. You don't want to flatten it or squash it too much, so put the press on a lighter setting.
You can use any marinade that you like. I used a mix of red wine vinegar, tomato paste, lime zest, pickled chilli brine and water. I let it marinade for 24 hrs.

Step 2 – fry the veg and make the sauce.
Cut the tofu into pieces, about 2 cm cubes.
Fry the tofu in a little vegetable oil in a medium-sized saucepan.
Add the garlic and fry for a minute longer.
Slice the carrot and add to the pan.
Chop the onion, mushroom and pepper into large pieces.
Add the onion and ground ginger and fry for another minute or two.
Add the bell pepper, the lime juice, lime zest, red wine vinegar, sugar, and soya sauce. Give a good stir and leave the lid off.
Mix the cornstarch and water to make a past and add it to the pot. Let it simmer for about 5 – 10 minutes while stirring almost constantly. Keep an eye on the sauce because you don't want it to burn or to become too thick and sticky. The viscosity should be thickish and a little sticky.
Garnish with the sesame seeds.
Serve with plain rice.
Results
Really beautiful dish full of strong flavours thanks to the lime, red wine vinegar and dark soya sauce.
