Roast Lemon Potatoes
If you love potatoes as much as I do, you will love this dish too! Very simple, but will add that extra layer of taste to your meal. Potatoes are a great source of carbohydrate, are sweet and delicious. You can serve these on their own or with your main meal.
Ready in 45 minutes
- Potatoes x 3 medium
- Juice of 1 lemon
- Salt x to taste
- Black pepper to taste
- Olive oil x 30 ml
- Vegetable stock x 50 ml
- Cut the potatoes into quarters and part boil them in just water. Drain and allow them to cool.
- Roast in the middle of a preheated oven at 200C for 25 minutes.
- Turn the potatoes and add the lemon juice and stock. Sprinkle with salt and pepper.
- Put back in the oven for 15-20 minutes at 200C.
- Serve hot or cold.
