Roast Lemon Potatoes

If you love potatoes as much as I do, you will love this dish too!  Very simple, but will add that extra layer of taste to your meal.  Potatoes are a great source of carbohydrate, are sweet and delicious.  You can serve these on their own or with your main meal. 

Serves 2

Ready in 45 minutes


  • Potatoes x 3 medium
  • Juice of 1 lemon
  • Salt x to taste
  • Black pepper to taste
  • Olive oil x 30 ml
  • Vegetable stock x 50 ml


  1. Cut the potatoes into quarters and part boil them in just water.  Drain and allow them to cool.
  2. Roast in the middle of a preheated oven at 200C for 25 minutes.
  3. Turn the potatoes and add the lemon juice and stock.  Sprinkle with salt and pepper.
  4. Put back in the oven for 15-20 minutes at 200C.
  5. Serve hot or cold.
