Vegan Quorn Chow Mein

Chow mein is a classic dish, so why not veganise it?   To keep the carbs low, I used zoodles instead of noodles.  You can make your own source if you want, but I used a packet from the supermarket.  Super quick. Super easy.

Serves 2 

Ingredients

  • Courgette x 1
  • Carrot x 1
  • Parsnip x 1/2
  • Peas 1/4 cup
  • Sweetcorn 1/8 cup
  • Mushroom x 6 medium
  • Sweet red pepper x 1
  • Vegan Quorn  x 100g
  • Garlic  x 3 cloves
  • Chow mein sauce 

Method

  1. Cut the carrot and parsnip into thin strips and fry in a frying pan or wok until tender.  

  2. Add al the other veg except the courgette.  

  3. Spiralize the courgette and add with the chow mein sauce.  

  4. As soon as the sauce is hot enough, serve and eat.  Very simple dinner. 

Nutrition

Vegan Quorn pieces: low in fat and sugar and high in protein with some roughage.  

Courgette: has only 20 calories per 100g.  1.8g of carbohydrate compared to instant noodles, which have 25g per 100g 

For a little extra nutrition sprinkle some nutritional yeast with B12 on top.
